I've put on more pounds than I'd like over the Christmas holidays and decided to teach myself to cook healthy meals with a wok (using Grace Young's superb book "Stir Frying to the sky's edge"). I can now cook simple very fast delicious stir fries (still learning), but oh, the slicing and julienning of vegetables takes me FOREVER. I saw this microplane slicer, and since I own and love their graters, I decided to see if I could reduce my veggie prep time.
Wow oh wow !! Where has this slicer been all my life?
First off, the slicer has non slip rubber feet and can be used right on the kitchen counter, or it fits over a bowl. I started out with green and red peppers, thinking this would be it's ultimate test as they are so delicate. Zoom zoom zoom and the peppers were done. I played around with the very easy to use thickness dial adjuster and it made no difference whether I was doing the thinnest paper thin slices or the largest 1/4 inch slices (I actually measured this for reference !)...they were all perfect...no ragged edges at all. I am beyond pleased. I don't have great knife skills, but I timed myself with the slicer, and it only took me 1/3 of the time it normally takes me with a knife thinly slicing veggies. It was great with every vegetable needed in my recipe tonight.
Obviously, the blade is very sharp, but the food holder is well designed with a non slip rubber hand hold and is easy to use. For storage, the adjustable thickness dial must be turned all the way on the dial to the UP position, so that it is no longer possible to keep on turning it. This puts the blade into a kind of safe mode and it can then be stored in a drawer (or wherever) without the risk of cutting fingers.
I can't speak to it's longevity yet, but for the price it costs, and the time it saves me, I wouldn't be without it.
Oh, and I forgot to say it can be washed in the dishwasher (though I'm going to hand wash it like I do with my good knives).
