I bought 4 of these baking sheets - 2 for me and 1 each for my 2 daughters. I used them for the first time for Christmas cookies and was wonderfully surprised at how well they work! They truly are NO stick. Even the sugar I sprinkled on that overshot the cookies. NO STICK. It worked so well I thought I would give it a real test. I made a pumpkin pie and placed it on a baking sheet on a cookie sheet. The pie did spill over and burn and it DID NOT STICK! My smoke alarms are VERY sensitive and I was able to actually remove the burned stuff with a spatula while the pie was still in the oven - in one piece - very easily. Cleanup was a breeze with just a soapy sponge and water. Easier than wiping off the table. I only regret I hadn't bought more of these things. My kitchen will never again be with out them.

Although the Expopat is nicely non-stick, I am not completely impressed with the baking results. I baked sugar cookies using the same dough batch and same Lincoln baking sheets, but placed the Expopat on one sheet and Reynolds parchment paper on the other. Cut cookies with same cutter and out of same thickness of dough, and baked in same oven. The cookies baked on the Exopat were slightly browner around the edges for the same baking time, where the cookies baked on the parchment were evenly golden. In my book, especially with sugar cookies, even cooking/even color is a point of no compromise. Both surfaces release well, but I actually think the parchment is even a bit easier lift off. I'll keep the Exopat to experiment with other recipes and baking needs, but for my cookies I will stick with parchment....

These things are great. I ordered one, liked it so well, I bought another. I use them to line baking sheets and to knead or roll out doughs (they have a bit more silicone on the bottom than silpat does, so they don't slide around on the counter and you don't have to spend extra for a second product, "roul'pat").

If you're baking a pie or anthing else that is likely to spill over, you can put one of these on a a half-sheet pan and put that on a lower rack to catch the spillage. All the spilled juices fall onto the silicone and bake. They wash off or peel off easily, even if burnt to a black crisp. No more having to clean the oven simply because you baked a pie. Needless to say, anything you cook and actually want to eat, like cookies, bread or oven fries, will not stick to it either.

All I can say about this little mat is wow. I have a very old, trashed to all heck cookie sheet. This Exopat has given my old beat up cookie sheet life again. Just put the Exopat on the decrepit cookie sheet and no more sticking or burning bottoms. I had adjusted my oven to the old baking sheet (I was never able to cook anything at the middle level, the rack always had to be moved to the top) and I actually wound up undercooking my biscuts because of what I was used to.

The only thing I dont like about the exopat is that the first time I used it, I got a little burned rubber smell, didnt transfer to my cookies though... and thats the only bad thing I can say about this product.

Get one for yourself, one for xmas presents, everyone with an oven can use an Exopat!

I have one of the Silpat's which is more expensive and love it for baking. It saves messy cleanups and is more environmentally friendly than continually using parchment paper. When I saw the Matfer product was made by Silpat and was significantly less expensive, factoring in the 4 for 3 promotion, I bought two. The first two that came were absolutely filthy, having grease marks all over the edges. In addition, the white edging was peeling/flaking off both mats. Amazon's return service was a dream and I reordered replacements for the two defective mats. Well, guess what - the replacements' edges were also peeling/flaking off. I've returned these to Amazon and once I get my refund will purchase the more expensive Silpat product. Don't waste your money on these less expensive items.
