Basically I love this pan. I long ago ditched the poisonous non-stick coatings, and am now replacing my Stainless steel and bare cast iron to avoid leeching metals. I love a heavy pan, it cooks much better than the tri-ply SS it is replacing and at a lower setting, and cleans up beautifully with a brief soak. I love the light interior -it is bright white, so I can see the food. The Chianti color is lovely, and fortunately not brown toned. I am careful to avoid temperature shock.
I'm glad the other reviewer suggested the Mario Batali silicone HANDLE GRIP that matches this, too.
The one caveat is that the interior is kind of uneven, rippled, almost lumpy, as if it was being cut by hand and they didn't quite finish before they applied the enamel.
The leaflet says "Your Mario Batali Cast Iron Cookware has been uniquely hand-cast from molten iron in individual sand molds and layered with three coats of high quality enamel. Each piece is then baked at extremely high temperatures to seal the enamel coating and create the high gloss finish."
I called COPCO, who makes these, and they reiterated that these are hand made and unique, but that if I thought there was a problem I could return it for a replacement.
I'm really not sure whether this is a defective one or just the way the Mario Batali pans are. I didn't see anything about this in any other reviews. If anyone else has one and can comment I'd really appreciate it, especially before my 30 days are up!
It unfortunately gives the interior more of an amateurish look than a handcrafted one. A helper handle would also have been nice.
