I was very excited to receive my new Atlas Pasta Maker. I had not attempted to make my own pasta before using this. I have to say, way easier than I thought it would be. Incredibly tasty as well. I'm totally sold on the process. I paid a little extra to get what I thought was a high quality machine because I believe it's worth paying more for better performing products in the long run. Although the very first batch turned out tasty I noticed that the spaghetti was wavy in thickness. I quickly realized that one of the rollers was eccentric so every turn of the roller would create thick and thin waves. Not so much of a problem unless you want it thin which I did. I returned it to Amazon to get another of the same model. The rollers on the new one were perfect. Unfortunately the adjusting knob had an unfinished edge and was sharp as a razor. Back in the box for UPS pickup. Amazon has been great to deal with in this regard. As I said, I am totally sold on making my own pasta. Unfortunately I'm going to have to look for a different model to do it with.

Customer Review: A Terrific Pasta Maker!!

After researching many products, I chose this pasta machine and am so glad that I did! I use the simplest pasta recipe (1 cup flour, 1 egg, and 2 tablespoons of water; multiply this by the number of servings you want to make), and use my bread machine dough cycle to do all of the kneading (10-15 minutes until the ball is consistent and not at all sticky). Wrap it up in plastic wrap for 20 minutes, divide, dust with a little flour, and it's ready for rolling. Watch the Marcato Youtube video to see how to do the rolling (it's in Italian, but you'll figure it out by watching). The pasta machine attaches to my granite counter top (not totally firm, but good enough) and this machine very easily rolls the dough to the right consistency and thickness (I stop at 5), and then cuts it easily into spaghetti or fettuccine (also great for lo mein). After hanging the pasta to dry for a while, it cooks in 2-3 minutes. Now, what to do with all of that dry spaghetti in my cupboard? A great buy, especially from this Amazon distributor!

I have the attachment for the Kitchen-Aid stand mixer but the "pasta" it produces is fairly horrible. I kept seeing these devices used on Iron Chef America (like I did with the pressure cooker--great help, love it). My concern was that the dough would stick to the rollers and cutters. It will if you don't dust liberally with flour. Flour is your friend.

I think Marcella Hazan said the Marcato doesn't produce thin enough pasta. You can see through the dough on 8 and it goes to 9 which results in your fingers going through the sheet of dough when you try to lift it. 9 is like turning it up to 11, I don't go there. I don't get what she's talking about.

You can freeze half the dough for later. Just plan ahead a little and your life will be simplified by this sturdy, heavy, trouble-free pasta machine. Next I'm going to make wonton wrappers.

I've been wanting a pasta maker for several years but, being retired and living on a limited income, I couldn't afford a good one. At Christmas, I satisfy all my children, grands and great-grands by making cookies. I have a lot of arthritis in my hands and I thought I would have to stop the cookie making, until I found a Marcato cookie press. This press is so well made, and works so well, I've been able to continue the "Grandma's Cookies" tradition.

Today, on the way to the supermarket, I came upon a yard sale. Lo and behold, I found a Marcato Atlas 150 pasta maker priced at $10. It even included the instruction booklet. I offered $5, to which the woman countered $7!!!! I scooped it quickly and checked here to see how well I did. Seems like I paid less than 10% of the average price for a used one.

YIPPEE!

I got this pasta maker based on feedback from this and similar web sites. As always, the quality of the pasta depends on the quality of the dough - and that takes some practice. Once I had a good recipe and decent results rolling out by hand, the addition of this machine made life great!

Despite the jokes about Fiats and other Italian machinery - this machine is world class. It is heavy, solid and built to tight tolerances. You need to cut your pasta to fit and it's nice to have another set of hands, but once you get used to it the results are amazing!

I also got the ravioli attachment which is awesome. This machine will last forever if you care for it (do not immerse!) and makes a super fresh pasta dinner in less than an hour. My Sicilian mother (rest in peace) would be jealous!
