I got the Aebleskiver last week and noticed two very small rust spots on the bottom side which was taken care of by rubbing a small amount of oil on it. It is pre-seasoned but, there is a slight sticking until the batter is cooked enough to loosen to turn in the holes. That will not be an issue as I keep using it. I have been using a short metal tooth pick to turn while using a butter knife to loosen on the sides. I got an idea to use two chopsticks, one in each hand, sharpened in a pencil sharpener to loosen and flip in the holes. I'll be using it more often using different batter and trying meat and seafood. My kids love the pancake balls from bisquick topped with powdered sugar. Don't fill to the top. Allow for expansion and make the batter a little runny. Adding the meat or ingredient into the batter, flipping it and allowing it to heat inside the puff is the secret. You can watch a video on you-tube. I saw a woman making takoyaki, which is similar to using a Aebleskiver. She was a pro at flipping them in a takoyaki pan. Hope this helps.

Lodge makes good quality cast iron items, and this pan is no exception. There were cheaper aebleskiver pans, but I chose this one after reading many reviews and because I have other Lodge pans that I really enjoy. I have never had an aebleskiver pan before, so I decided to get a good one. This pan is heavy cast iron, very well made and precision sand cast. Unlike aluminum pans, the cast iron allows it to reach the correct temperature and easily maintain it, very important for perfect aeblskivers. The pan arrived "preseasoned" but I recommend additional seasoning in the oven before useing to cook aebleskivers. After a few uses, the seasoning on my pan is excellent, the puffy little pancake balls release easily and come out perfect! (with a little practice on my part). I use a round bamboo skewer to turn my aebleskivers. Aebleskivers are an elegant, delicious little breakfast treat, fun for the whole family! This pan works great, I recommend it!

This is a wonderful pan. First, I looked at the non-stick version offered by another brand, but I didn't really want a non-stick version because I don't think pancakes taste as good when they are cooked on a nonstick surface. Also, in my experience, non-stick coating tends to peel after a while.
When I found this cast-iron version, I bought it right away. The ebelskivers come out perfectly if you baste each well with a tiny bit of butter before adding the batter. The first time I used the pan, it was a bit of a disaster because I had to learn how to flip the cakes, but the second time I made them, I got the hang of it.
The cakes really are superb in this cast-iron ebelskiver pan. This pan will last a lifetime--many happy Sunday morning breakfasts to come!
On a side note--I recommend purchasing the book, "Ebelskivers" by Kevin Crafts. The entire book is devoted to tasty ebelskiver recipes.

You know sometimes reviews help and sometimes they dont. Some people clearly dont follow instructions but use products how they want then the product fails to deliver. This is an awesome pan perfect for those pancakes balls with apples inside and perfect if there is a burglar in the house, man its heavy for its little size. Timing and seasoning are key with this pan, turn things at correct time and season with butter and use brush to spread the butter completely around the hole before adding anything. You get it eventually. Although i gave a 5star i would have gone way to excited if the inserts were a bit bigger, one inch is like making bite-size stuff, but then some pastries rise so i guess its okay. Love it - for both its uses lol. Any changes seen on this over time please, its not damaged its turning into a more seasoned cast iron, give it time, its like fine wine, older the better, so use it up!

Even though this pan is pre-seasoned, the day it was delivered I coated it with peanut oil and put it in a 350 F oven for about an hour then I rinsed it under very hot water and put it back in the oven for a few more minutes, to dry. A few days later, when I was ready to make the aebleskivers, I heated the pan on medium (gas burner) then put a bit of butter on each well and started filling the wells with the batter, adding a bit more batter as they cooked. Nothing stuck. I was able to turn the aebleskivers easily using a chopstick, turning each one three times. Didn't need to add more butter. Turned the heat to medium-low half way through. The lovely things turned out great. No mess. Once it had cooled, I rinsed the pan under hot water and let it dry on the burner.
If you are looking for a good aebleskiver pan, this one will not disappoint.
