Customer Review: Practice makes perfect!

If you're in the market for a cast iron aebleskiver pan, you likely already have experience with cast iron or making aebleskivers in a non-stick variety. If you're an idiot like me though, you are a total novice with a high tolerance for frustration :-)
With that said, I love my Lodge cast iron aebleskiver pan. I bought it with full understanding that I knew not what I was doing. Upon arrival, the pan surface was rough like high grade sand paper and needed breaking in. I spent an entire evening making a maiden couple dozen aebleskivers, and let me tell you - I would not have claimed them as my own for a million dollars. By the end though, I had made enough forward progress to not throw the whole pan away like I was contemplating during my first few minutes. A couple of tips:
1) Have copious melted butter warmed next to your pan. Between each batch, liberally coat each well with a basting brush dipped in the butter. Brush the flat surface between the wells also - can't hurt, especially if you accidentally fill your wells too high.
2) Don't over fill the wells! I learned this the hard way. Pour a tablespoon or two of batter in to the bottom of the well, top with a teaspoon of filling, and cover with another tablespoon of batter or enough to fill until about 1/4 inch from the top of the well. If the batter spills over and makes "muffin tops", you'll have a hard time flipping the aebleskiver. Like you won't be able to without dismembering it.
3) Have a variety of tools ready for all flipping needs. In one batch, I used knitting needles, chop sticks, butter knives, and a soup spoon to aid in loosening the aebleskiver and maneuvering it how I needed to. I suppose I'll find the magic tool someday, but in the meantime, it's just better to be prepared.
4) Experiment! I've used nutella, jam, flavored cream cheese, custard, cheesey ground beef, buffalo chicken dip, and jalapeno popper mixtures for both sweet and savory varieties. The flavors taste great even if the presentation takes practice.
In summary, cast iron is absolutely your best bet for flavor and crust on the aebleskivers, even though uniformity and consistently perfect appearance is better with a non-stick pan. I'm not giving up hope though, that perfection can be achieved with a few more years of patina and practice :-)
Description of Lodge Pro-Logic Cast-Iron Aebleskiver Pan
This seasoned and ready to use Danish Cake pan is also called an "Aebleskiver, which means "Sliced Apples" in Danish, is excellent for making Danish "pancake balls". Considered a specialty bakeware item, the little round cups are filled with dough and as it starts cooking, the chef uses a little wooden stick to "flip" it into a little ball which can then be filled with fruit, such as sliced apples.
