I must say that after reading all of the positive reviews, I am rather disappointed with this grill pan. Like another reviewer pointed out, the pan heats very unevenly. The bottom gets very hot and burns practically everything that falls between the grill ridges, while the top grids are hardly heated and do not cook properly. In addition, everything seems to stick! No matter how much cooking spray or vegetable/canola oil I use, everything sticks. If you have something like a burger or fish, it falls apart easily since only the meat that is in contact with the raised edges actually seems to cook, and those portions stick to the pan when you're trying to flip the meat. The rest falls to the bottom, where it burns. All of this makes this pan incredibly hard to clean. Even with a stiff brush, it takes a long time to finally scrape everything off. And, with the sticking, you'd think I'd get great grill marks on my food. . . NOT. And what is all this talk about the great seasoning this pan gives food?? I haven't found this to be the case at all. I'm not sure what else to do. If the heat isn't turned on to medium or medium-high, the food barely cooks at all. However, at this heat, you get the sticking and burning problem I mentioned. Overall, a very disappointing buy.

It's cast iron, so you can run this pan as hot as you dare to sear the flavor in. Makes excellent burgers and brats, with nice grill marks but no burned spots, even when well-done. Try that with a George Foreman and your burger will be black outside and dryer than the Mojave Desert inside.The square pan provides plenty of room to fry up a few burgers and the hot juices in the bottom are made-to-order for sauteeing a few mushrooms, onions, or peppers to go on top. The handle is fatter than older Lodge designs and quite ergonomic as long as you're wearing an oven mitt. Cleans nicely by boiling a little water in the pan and giving it a quick scrub with a stiff round natural-bristle vegetable brush and the hottest water that'll come out of the tap. I would recommend this pan over the 11.5" one Lodge also offers because the thicker bottom, smaller sides, and deeper walls of the 10.5" pan provide fairly even heat over the entire grill surface. It appears that the 11.5" pan is based on the griddle of the same size, and my 11.5" griddle is hot near the center and cooler near the edges when used on a burner - OK for hash browns, but bad for burgers, grilled cheese, and such. Excellent product; if you can't grill outside, this pan is the next best thing!

2011: Updated Review of second pan purchased in 2011 (to allow for cooking two steaks at the same time, one pan is too small): The bottom ridges are now quite wide (about ¼-inch. Previously came to a fine, "sharp" edge) and steaks have fat-looking grill marks. The taste and texture of a steak cooked on the newer design are not as good as one cooked on the older... has a more burnt flavor which covers up the taste (USDA Prime Rib Steaks from COSTCO-highly recommended), and the texture is way too crispy! Too bad I didn't buy a 2nd one in 2006 cause I'm back to cooking one steak at a time :-(.
2006:First Pan Purchased from Amazon in 2006: Very nice for my first iron pan. It does two of appropriately sized pieces of meat... except for hamburgers. They have to be done one-at-a-time. But it really cooks great! Nothing sticks (I do not cook fish in it... afraid I wouldn't be able to get the smell out). One huge problem is that the two presses Lodge Logic makes (round, rectangular) do not cover the entire surface. That's ok for burgers, since I'm only doing one-at-a-time, but for two meats, BLURRRRBBBHHH! And you cannot fit two of the rectangular presses into the pan! I am considering buying another pan to use as a press ;-}
Customer Review: Excellent flavour, grill marks and easy cleanup Summary: 4 Stars
Pros: The square shape of this pan can accomodate 4 medium sized chicken breasts or 2 decent sized steaks. The high sides help prevent the cooking from splattering all over the stovetop. The tall grill ridges provide good sear marks and let the grease accumulate on the bottom. That grease continues to cook under AND away from the meat giving it a hint of smoke that is as close as you can get to a charcoal grill. Clean up is easy: when cool, use a stiff brush and plain hotwater, then reheat on the grill and wipe down w/ papertowel soaked in oil.
Cons: You will still need to season it a little. It will smoke when you try to grill on it the first 10 X or so. It is ugly and heavy.
Tips on seasoning: the oven method works fine, but the best (and quickest) way to season this grill pan is to fill it partway w/ cooking oil and deep fry something like you would in a skillet. The sides are high enough and after a few times, your grill pan will be seasoned.
If you want a grill pan that gives great flavour get this one. If you don't want the flavour get the other ones on the market. If you care about splattering, get this one, if you don't get the flat grills.
Customer Review: LOVE this grill pan!!! Summary: 5 Stars
I've had this pan for over 5 years now. In the beginning, it smoked like crazy, food stuck to the sides, and food that fell to the bottom was a nightmare to clean out. HOWEVER, after proper 'seasoning' of this pan, the smoke has significantly reduced in my kitchen (along with me learning to lower the temp) and the clean up is a breeze. I also use the round Lodge griddle pans for pancakes and the Lodge fry pans. I have the Lodge dutch oven, though I have yet to use it.
If you are a novice at using and caring for cast iron pans, as I was, please, PLEASE be patient and allow yourself time to learn how to care for your pans. It will be WELL worth it in the end. I use all of my cast iron pots/pans on my electric stove and have had no problems with uneven cooking or cracking or anything.
Just please don't rate these poorly because you haven't learned how to properly care for them or because Amazon screwed up your shipment. In doing so, you're not posting a fair review, especially in light of the exceptional quality that Lodge puts into their products. I'm just thankful that I can still find QUALITY cookware that is still MADE IN THE USA!!!
