This, along with the 12 inch, were my first cast iron skillets. I think they rock!

This 8" is perfect for omelettes, 1 or 2 eggs, or a single serving of whatever.

We were looking for something non-stick, but not teflon, etc. Stainless just seems to get dirty and stained so easily.
They are a bit of a pain to care for, as opposed to something we can just throw in the dishwasher. My wife hates these for the simple fact that they aren't "normal"
I just scrub with hot water and a stiff brush, when it's really dirty I'll boil water in them and all the grime floats up. I recently just scrubbed them with soap and a scotch-brite pad, and then re-seasoned them. Good as new (or old!)

I have owned a Lodge Logic 12 inch pan for years but it is so cumbersome when you just want to cook something small. This little guy is great for cooking a 2 or 3 egg omelet. I can't imagine having use for something smaller, but 8 inches does the trick. It is moderately fast to heat up and cooks just like you expect cast iron to.

A word of warning, the pan may be pre-seasoned, but that does not mean it is ready to cook eggs or other sticky food. Start off by cooking some bacon or other fatty meat. After a few runs like that, oil it up and hope for the best. In a month's time, if you treat it right, it will have the nice base seasoning that gives cast iron its awesome nonstick properties.

I purchased this Lodge 8 inch skillet along with the 12 inch skillet. I am happy with my purchase. The pan seems to be very solid and cook evenly. I have only cooked a few things so far. First I cooked cornbread, it turned out amazing. I have also cooked some sausage and eggs, they also cooked well. The eggs stuck to the pan a little, but not a big deal. As I use the pans more I'm sure the seasoning will continue to build up and the pans will become more non-stick. But they were still easy to clean up, I just added some water in the pan for a few minutes and the food came right off, with a scrub brush. Good price on Amazon and free shipping is great. The pan should last a life time.

I have three of these skillets: 8", 10" and 12". They are absolutely wonderful! I know Lodge recommends no soap, but I use mild soap, anyway. I dry them after washing and when necessary, lightly coat with canola oil from a spray can.

I can do anything in my cast iron pans--including flipping an omelet!

Nothing beats cast iron for its superior cooking surface. I like to cook at very high temperatures at times, either to sear meat or to caramelize vegetables and nothing handles the heat like cast iron.

I bought this skillet to use as a brownie pan, thinking that it would be too small for anything else. Boy, was I wrong! Besides being perfect for brownies, it's also great for making gravy, reheating leftovers, and making fritattas or quiche filling!

I found another use for it today: Keeping individual servings of french fries hot! Just heat it up in the oven or on the stove, and put your hot fries on it so they don't get cold as quickly.

I used to have a problem with scrambling eggs in a teflon coated pan; The teflon would always scratch and get bits of it in my eggs. That doesn't happen with cast iron!
