I flat out love this fryer. I purchased it to replace one of those fancy electric deep fryers. By doing so, I've saved counter space, because this fryer sits on your stove and can be stored permanently on the back of your stove full of grease with the cover on it. It will heat grease fast, and because its cast iron there is an exceptional taste difference in everything you fry. Also, you can use it as a regular pot. If you are assembling just the basics or a dream kitchen, a cast iron Skillet, Grill, and Fryer are a must have. There is no replacement item, or substitute for certain things you cook.

Don't go by its name. "Frying Chicken" like "sun bathing" may not be your thing these days. In spite of all the advantages of cast iron, they still tend to be heavy and bulky to store. So, if you are looking for, just the one, all purpose cast iron cookware, or even if you are a beginer..this is all you need. I find myself using this one all the time and is usually always on my cooking range, my everyday pan ! It is big enough to really get the feel of cast iron cooking and small enough to keep it on the cooktop all the time. Did I mention cast iron is great for ethnic foods ?

I've never been able to make excellent fried chicken, no matter how many recipes I tried, no matter if I used non stick, stainless steel or aluminum pans, no matter what tips I followed. Then I got this pan (couldn't buy it under this name but got the 10.25 deep skillet and matching lid - which is the same thing as the 3 qt. chicken fryer). I made excellent fried chicken last night, and today have a pot roast simmering that seared up to absolute perfection with no effort on my part. Who'd have thought that all this time it was all about using cast iron. I'll never go back.

Neat, neat, neat!! I have fried chicken and fish, and browned a roast in this pot: all to great ends. Also used this to cook rice, and it is the best rice cooker I have ever used. The heat retention cooked the rice to a fluff with no residual water to pour off. Southern Corn Bread came out as advertised in the recipe, and the Smothered Chicken that we used this pot to make was delicious.This pot minimizes splatter on the stove, and is easy to heft around from stove to oven, or the table (placed on several thick hot pads).

I've been using this to bake pizza. The perfect crispy crust is more tasty than some store bought pizza. By the way, I bought the dough from Trader Joe which cost only a dollar, and hassle free, no need to knead dough, and still being able to enjoy home-made pizza with fancy toppings, or just plain 5 cheese pizza. It's a superb product. Cleaning is a breeze: a good brush with hot water, dry, then oil thoroughly while it's warm. Voila! Ready for next pizza days later.
