Customer Review: Deep Skillet Discovery

I purchased one of these chicken fryer's (just 3" deep, 10" skillets) about a year ago, after a trip to my brother-in-laws farm in northeastern Kansas. He prepared lunch for us, fajitas as I recall. He was using this exact pan for the job. He had cooked two kinds of meat in a smoker, but sauted the veggies in the skillet. I mentioned how much my wife and I liked cast iron cookware, and he remarked that he and his wife had owned and used their deep skillet for about 30 years, raised two kids with it, and just loved it. I was intrested in the 3" depth of the skillet, and got to thinking about how versital such a pan would be for the person that might be on a buget, and can afford only one. You could fry steaks, hamburger patties, and chicken breast, of course. You could also cook spaghetti, goulash, fried potatos. But it also could be used as a deep fryer, or it could also be used as a dutch oven (a little small if you had large a family, but Lodge does make a 5qt version). And of course it could do what it was made for, to fry chicken. It's a little more versital that the regular 2" high skillet. We are cast iron lovers, and we own a full arsenal of skillets, griddles, and dutch ovens. They have all served us well in the last 25 years of marriage. But this pan has quickly become a favorite, in our house. It's just the wife and I now, our daughter is out of the house, and attending college. The 3qt size is good for the two of us. I think if we had it to do all over again, we might start out with the deeper versions of the standard 10" and 12" skillets with lids of course. The are heavier, but I think more versital, in the long run. Very highly recommended, if your are just starting out in life. But beware if you are a cast iron veteran, it might just become the most used skillet, of your cast iron arsenal.

I purchased this pan because I have been using "non-stick" chicken fryers for many years (I've been through 3 so far). The more I learned about the potential dangers of using non-stick pans, the less I wanted to use them. I recently watched a cooking show on TV where they talked about how cast iron was the safe non-stick method of cooking and they mentioned that the pre-seasoned Lodge Logic cast iron pans were great. Although I was a little skeptical, I bought this chicken fryer. Some reviewers suggested cooking something with a high fat content (like bacon) in it for the first time but I'm on a diet so I took a chance and made meat sauce for spaghetti with 96 percent lean ground beef. To make matters even worse, the ground beef was still partially frozen. Even though I used a very thin coat of olive oil in the bottom of the pan, I was sure it would stick. I was amazed at how the ground beef did not stick AT ALL in the pan. It was truly as non-stick as any other non-stick pan I had ever used. And it cooked the meat faster than the other non-stick pans. Tonight, I even reheated the spaghetti in the cast iron pan and although a couple of noodles did stick a little (and I mean very little), the pan cleaned perfectly with just some hot water and a brush. I sprayed the pan with oil while it was still warm, wiped it with a paper towel and it looks beautiful. I am a total cast iron convert and am looking at Lodge Logic pans to replace my 8 inch and 10 inch non-stick skillets. And the cast iron pans will last forever!!!

I own three pieces of cast iron cookware, and this item is one of them... and among my favorite cooking implements, period. For dishes requiring steady, even heat and for cooks who require durable cookware with easy clean-up, cast iron CANNOT be beat!

This fryer is going to last forever. Its care is easy: I scrub it with hot water only, and dry it with an old rag and apply a thin layer of vegetable oil while the iron is still hot... a year and a half later, it's still rust-free and delivering the reliable service I have come to expect and admire. No scratches interfere with its performance, as is the case with my allegedly-long-lasting Wearever nonstick cookware set (what a waste of money THAT was!). In fact, in this particular chicken fryer, I've produced everything from french fries to spaghetti sauce to eggs and bacon to french toast! It's a dependable griddle, skillet, grill, and pot, and it goes right from the stovetop and into the oven for maximum versatility.

The best thing about the chicken fryer is its somewhat smaller circumference than the skillet or the Dutch oven. It takes up a bit less stovetop space and provides greater depth, making it ideal for small batches of soups, stews, or deep-fried goodies.

I am an avid home-chef, and I can say without exception that my cast-iron cookware is the best kitchen investment I've ever made.


Customer Review: Very pleased with Lodge cast iron ware

I ordered three different Lodge Logic pans...this fryer, a 10.25 inch skillet and the 10.5 inch griddle. I loved them so much I bought the combo cooker as well. Now the lids are interchangeable for all three pans because they are the same circumference, while the fryer is nice and deep. I've fried rice in it, made spaghetti sauce, bechamel, and lo-mein all with a simple clean up with hot water and a scrubber brush.

One amazing thing is the deep frying. I fried my battered fish and thick chips in the fryer and the chips came out crisp...and stayed that way. Normally my chips end up soggy if left for some time, but these actually got cold and were still crisp. I cannot believe what I've been missing out on all this time I didn't have cast iron.

Now I'm relaxed about using stainless steel spatulas and spoons on them because there is no fear of scratching. I make sure to oil them after I wash and dry them and have popped them in the oven for 2 hours one evening to keep them nicely seasoned. I think a weekly seasoning will be beautiful for maintaining a really good non-stick surface.

Natural, solid, durable, and reliable... you cannot go wrong with these pans.

Customer Review: The "logic" choice

If you like mouth watering "ol'style fried chicken" or stews that melt in your mouth, and cooking time is not an issue, Lodge Logic is the way to go.
It is the best hardware for the job. It is simply fantastic and made in the USA (read safe to use).

Cast iron is an ideal heat conductor, it heats evenly and consistently, it is inexpensive and will easily last a lifetime or two.

I would like to point out that this cookware needs "love" a.k.a. special care: It is very important to follow the cleaning and storage instructions and it will eventually require "Seasoning".

It is safer than hi-tech non sticking pans and pots and does not need to be replaced every now and then.

I use my 3 quart fryer to slowly simmer hearty meat dishes like goulash, pörkölt, spezzatino and chili con carne. I also occasionally use it to make fried chicken.

To make pancakes I use my Lodge Logic round griddle, it beats hands down the so called non-stick cookware.

My next purchase will probably be the 5 qt, Dutch Oven.
