Customer Review: Unsurpassed for Low, Slow Cooking

Enameled cast iron is unsurpassed for low, slow cooking both in the oven and on the cook top. Cast iron retains heat better than any other type of pan. The advantage of enameled cast iron is that it's relatively non-stick and doesn't react with acidic ingredients like tomatoes. Yes, this Le Creuset dutch oven is heavy (though not as heavy as some other brands). And yes it needs proper care. Use only wood or plastic silicon implements. Always cool it down completely before rinsing. We use a very mild liquid dish detergent. Never, ever use anything abrasive. It may sound complicated but isn't. Take care of your Le Creuset and you should have a wonderful pan that lasts indefinitely. I read in a review of another Le Creuset product that the pans need seasoning. Not true!! Unlined cast iron pans need seasoning and sometimes re-seasoning. Enameled cast iron could be destroyed by seasoning.

My mother has had a le creuset dutch oven for about 25 years and I always envied the tight-fitting lid that keeps braised dishes from cooking dry over hours when my dutch oven (stainless Revere Pro) constantly ran dry. The price was an impediment to picking up this fantastic oven but I finally invested.

Wow. So far I have only used it to make roasts (pot roast and pork loin) but each time the results are extremely tender and flavorful meat, with great drippings for sauce. Cleanup is a snap.

One word of caution - read the directions first. I did and learned a couple of things like not using metal utensils (can leave silver marks or chip the enamel) and not using very high heat (this is intended for low to medium heat). I cannot recommend this highly enough - bon appetit!

I bought this because I have seen it recommended many times by Cook's Illustrated. (Cook's Illustrated, by the way, has incredible recipes both in the cook books and their magazine, and offers some of the best advice for how to get the most out of this baby. The February 2008 issue of Cook's Illustrated magazine, for example, has recipes for No-Knead Bread, French Onion Soup, Stews, and French Chicken in a Pot that all make good use of this covered pot.)

I've used my French Oven to make stews and No-Knead Bread, and the food has been fantastic. Baking bread in one of these as taught by Cook's Illustrated gives the bread a crisp, crunchy crust that ordinarily you have to go to a bakery to find. People rave about my home-baked bread.

I had seen these pots in action on all of the cooking shows, so I figured they were serious cookware. After careful consideration I finally purchased the seven quart dutch oven, in the cherry red color. This size is perfect to make enough stew for my whole family, and the cooking qualities of this pot are just as they are billed. It browned the stew meat, deglazed beautifully, heated evenly, and went right in the oven for the final cooking phase. After dinner I was thrilled to see that Le Creuset's cast-iron cookware cleans just as easily as their stoneware line. Although this pot is VERY heavy, the benefits of cast iron far outweigh this "downside". I should have bought one of these pots years ago and I recommend one to anyone who loves to cook as I do.

Like most people reading these reviews, I did my research and wondered whether I would regret spending so much money on a single item of cookware. Well, let me assure you, it's money well spent. I just cooked my first-ever perfect pot roast (I have been pot-roast challenged for years), and though I had a great new recipe this pot gets most of the credit for turning out a deliciously tender, juicy roast. I was also amazed at how beautifully it cleaned up. After going from stovetop to oven and back to the stovetop, I thought surely I would have to soak the pan but nothing stuck at all. All it needed was a quick hand washing and it looked just like new. Now I want a whole kitchen full of Le Creuset!
