Customer Review: Great product but there's a learning curve

Everyone talks about how their waffles turned out perfectly starting with their first waffle. I'm finding it's not quite as easy as that.

I should start by saying I've never made waffles before. But I know how to cook and have made pancakes for years, so how hard could it be? Well, for one thing, the manual - which contains a number of waffle recipes - does not contain a recipe for just a plain Belgian waffle. That struck me as odd - there's a recipe for cherry sour cream waffles and one for cranberry brie waffles (and so on) but not one basic waffle recipe. I tried the Kitchenaid website, they don't have one either. So I searched online where there are, of course, hundreds of recipes.

I was surprised to find that most of the recipes called for using yeast and/or cake flour. I didn't have either on hand, so I searched for a recipe using regular flour and no yeast.

Recipe #1: I followed the directions explicitly and filled the baker until the peaks of the waffle grid were almost covered. Closed it and rotated the unit as instructed. Baked it for the default time of 3:30.

Result: I was disappointed to find that the waffle was incomplete; I hadn't used enough batter. In addition, it stuck to the iron and was difficult to remove. I reread the manual and concluded that the recipe did not contain enough oil (only 1 tbsp), so I added another tbsp of oil to the mix and tried again. I filled the waffle a bit more the second time, spreading it out with a soft spatula as the manual says and rotating the iron after closing it up. I over-compensated; a fair amount of batter oozed out the side and made a mess. But at least it was a complete waffle and it didn't stick that much. But I found the waffles didn't have much flavor and it still stuck a little so I decided to try a new recipe the next day.

Recipe #2: I bought some cake flour and used a recipe that had more eggs (with the whites beat separately), a full stick of butter and vanilla extract. I figured it would at least have more flavor. I poured the batter in the center, spread it out to the edges - the peaks were almost covered - closed the lid, rotated the iron and cooked for 3:30.

Result: my first waffle was incomplete and undercooked to the point where it separated into two halves and the inside was gummy. I added more batter the second time and cooked it for 4:00. Again, I over-compensated, and batter poured out the side. But finally, I had a complete waffle, and one that didn't stick. It was delicious, though it could have been cooked a little longer. For the next two waffles, I decided to pour the batter into a measuring cup first so I could be more precise with how much batter I used. I found just under a cup was the right amount and increasing the time to 4:30 produced a great waffle: lightly crunchy on the outside, moist on the inside.

Another thing I found was that the timer button has to be fully depressed. A couple of times I hadn't pushed it hard enough and when I looked to see how much time was left I found the timer hadn't started.

In conclusion, the iron works very well, as other reviewers have stated, but if you're looking for a basic Belgian waffle, you'll have to find a recipe (or a mix) elsewhere. Make sure it's one with a good amount of butter or oil so the waffles don't stick. And remember to pick up some cake flour. Once you find a recipe you like, measure out the batter and make notes on how much batter to use and how long to bake the waffle.

1/6/11 Follow up: Dan Moore posted a Comment on my initial review in which he recommended a waffle called "Waffle of Insane Greatness." He was right; it makes an excellent waffle. Out of the three recipes I tried, that was by far the best. It's easy to make (no whipping egg whites separately), makes a full waffle with no sticking, and it's delicious. When using that W.I.G. recipe with the KitchenAid Waffle Baker:
- you'll likely need to double the recipe; as is, it makes only 2 waffles
- use 1 cup of batter per waffle
- cook for 4:15 for a golden brown waffle, longer for a darker brown
