I bought this knives set for my wife for Chrismas gift in 2007. I decided to give a rating after using the set for over a year. The Set comes with 18 pieces and I will give them rating individual and frequency of usage!

Here is the break down of rating based on our usage!
The 8 inch chef's knife is used daily from chopping vegetables to boning the chicken/pork/beef. (My wife preferred J.A Henckels Twin Four Star Santoku for chopping vegetable since the grove on the Santoku help to release the vegetable stick on the blade.) The knife is very sharp and hold its edge very well. The first impression my wife had after using the knife was wow-The knife cut through things like butter! This knife is well balanced not too heavy or too light. However it does required honing once in a while just like any other knives. Only thing we dislike about this blade is that use it to cut vegetables, it tends to stick on the blade once chopped.
The 8 inch carving knife is for cutting those Costco Roatierary chicken. The thickness of the knife is slightly thinner compared with the chef's knife which allows it to cut through the chicken breast with ease. The knife works like a charm and it does not needed to hone so far. We have not use this knife to cut the turkey yet! We used this blade to cut Honey Baked Ham with no problems. The only problem is that my wife likes the cutting feel of this knife that she tends to cut more meat than we needed.
The 8 inch bread knife works very well when using it to cut fresh baked French bread. The serrated edge of the knife really help to tear through the tougher outter layer of the bread. This knife is making cutting bread an enjoyment and it works really well when using it to cut tomato too. It slice through the tomato like nothing which keep the juice inside the tomato.
The 6 inch chef's knife is shorter and lighter compared with the 8 inch chef's knife. The blade thickness is slightly thinner compared with the bigger chef's knife. Many time my wife intended to pick the bigger chef's knife and ended up picking this knife since she can not tell which knife it is from the block. The bigger chef's knife feel right. The 6 inch chef's knife and 8 inch chef's knife are identitical and only difference are the lenght, weight, and thickness of the blade. It can be personal preference although my wife preferred the heavier knife.
The 6 inch boning knife just extra knife come with the set and we never needed to use this knife since the 8 inch chef's knife can do the job.
The 5 inch serrated knife is another extra knife come with the set that we use occasionally to cut bread or cut sandwich. Since the serrated edge are so closely spaced so cutting through bread/tomato is not as smooth as the 8 inch bread knife. It feels like using hand saw when cutting through bread.
The paring knife is my favorited knife since I am the one using it to cut orange, apple, and other fruits. The blade is very thin and I used to carve Halloween pumpkin and ended up bending the blade. I ended up using the 5 inch serrated knife to do the carving on the pumkin. The only thing dislike about this knife is thickness of the blade is too thin that it can not do so heavy cutting otherwise it is a very sharp knife.
The steak knives are very good and I had two of the steak knives that were not properly sharpen by the factory. The blade edge of these two knives did not have even sharpness. The middle of the blade is very sharp but the tip of the blades were not sharpen so when I slice through the steak and the knives glide on top of the beef--making a half cut through. I changed to different steak knife and the knife cut through the beef like what it suppose to do. I was a little disappointed for Henkels' quality controll. I ended up sharpen two steak knives with knife sharpener. All these steak knives are sharp and can bend easily since the metal of the knives are thin. Disappointed for two of the knives not properly sharpen afterall I paid over $300+ for the set and I deserved some justification!
The shears are sharp but the design of the curved blades just push the cutting object out of the center. I think if the shears have straight blades that might preventing things get push out. I tried to cut hot dog using this shears and found out that the shears push the hot dog out of center reulting in half-cut. This is another designing flaw!
The sharpening steel is well constructed and feels solid. The grove on the metal are tough and do not wear easilly. However I realized that to sharpen a knife using the sharpening steel, you need to practice how to using this dawn thing. It would be easier for Henkel just throw in additional item such as one of those knife sharpeners.
The knives holding block's bottom got damaged from the water on kitchen counter. Now I can see the wooden block is curving on the side now! The overall for this knife set is 4 1/2 star. I would give it a five stars if the steak knives are proper sharpen and the shears are working flawless.
As far as the knives set goes it looks really nice to have in any home. The stainless steel appearance and the complete set in a block make any kitchen looks more funtional. This knives set is going to be in the family for awhile. My wife actually enjoy cooking now because the knives are so sharp and easy to work with. The only down side is that it is a little pricy. I hope this review give you some idea what you are getting!
