I had never heard of a spatula that expanded until a friend in Spain told me about hers. I was visiting in her summer house and she assumed I was familiar with it. She had it in her Madrid apartment and could I send her another for the family vacation home up north. She said her daughter had brought it to her from The States and had come to find it very useful. Since I never actually saw it and because she said it has no identifying name, it took me some time to find it on-line.
When I told her I had finally located it, she asked if I could send her two more for her other daughters. You see, it works beautifully for pizza or for the very common tortilla de patata - a staple in every spanish home. But it's also very useful for pies - you know how sloppy they can be to get out of the pan - or anything else that has a tendency to fall apart.
