THE VERY GOOD: Yes, the Brioche do pull off easily--no PAM, no butter, no nothing--with no more than a shake of the wrist, they'll fall right out.
THE VERY BAD: The edges of these molds are VERY sharp. If you're not careful, and happen to run a finger across its edge you can receive a surprisingly nasty cut. In fact, if you gently run your finger across its outer edge, you'll realize that these molds are close to razor sharp. My family are manufacturers, and I know that a stamped, steel form can have a unwanted, sharp edge when the stamping die has dulled. They should never sell a product with such tawdry manufacture, especially when you consider that at $13.59 for four, they're not giving these little suckers away. If it weren't for this major flaw, I would have given this product five stars. I did give it two instead of one because, as I had mentioned, they do release the Brioche wonderfully.
Customer Review: Real Non Stick, Works Well Summary: 5 Stars
My brioche simply pulls off easily right after baking, all the time, no exceptions! All I have to do is hold a warm mold (with a towel or oven mitten) upside down and pull on the brioche gently. Note that it is best to remove the brioche from the mold while it is warm or it might stick. After use, it easily cleans by washing with hot water only and drying with a kitchen towel. Its dark brown color promotes even baking. I have aluminum molds and have used tin molds, all I can say is that this Non-Stick bioche mold is so much more a joy to use. This 3-1/2 inch size is perfect for a 2 ounce dough. Depending on how much butter, egg, and sugar you've used, the 2 ounce portion will make a Brioche that's about 200 calories or more.

I puchased the Marinex 1 1/3 quart brioche dish and the set of Gobel 3 1/2 inch brioche molds to make one of the brioche variants from "The Bread Baker's Apprentice." This mold plus the others fit the recipe beautifully. These little molds produced the perfect small brioche a tete I was hoping for. I sprayed them with oil prior to baking, but I don't think that would even have been necessary. The released the dough quickly and cleaned easily. They are lightweight and nest for easy storage. The price is also excellent. I wish I had purchased twice as many and am considering buying more.
