Kitchen and Housewares Reviews of Global GS-10 - 5 1/2 inch, 14cm Cheese KnifeCustomer Review: Amazing piece of art for all cheese addicts Summary: 5 Stars
This beautiful Global knife comprises all distinctiveness of that great brand, including the price though ... It is great for semi-hard and hard cheeses (although I would not strongly recommend it for Parmesan cheese, despite that it worked fine for me, since Wustohof parmesan cheese knife is appreciably more efficient for that purpose). Don't pay much attention on those that tell You advices such as that other [less expensive] imitations with similar shape would do the same job (I tried several of those prior I got Global). On the other hand, don't expect this knife to do a good job for soft cheeses. Global knifes need a tad amount of attention and care, and in return beside superb design and balance (of course, which is an individual thing) are very thankful and durable. So if You are not cheese addict and prepared to give this knife care that it needs, then rather buy something else (cheaper that You can toast and replace after short time) - but of course, You won't know what You are missing ...
Description of Global GS-10 - 5 1/2 inch, 14cm Cheese KnifeGlobal knives are crafted of CROMOVA 18 stainless steel for the perfect combination of chromium, molybdenum and vanadium to maximize edge retention and stain resistance. Their light weight seamless construction and razor sharp edges make Global knives a popular cutlery favorite. Made in Niigata, Japan. Lifetime guarantee from Global with normal use and proper care. Hand wash with non-acidic dish washing soap and dry thoroughly before storing. High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives--of which this cheese knife is an example--have thinner blades and are lighter than traditional European-style knives. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety. This 5-1/2-inch knife has holes in its blade so it slips through medium-firm and firm cheeses without sticking. The edge is ground on only one side and is both finely serrated and scalloped for cutting through rinds. Prongs on the end pick up slices for serving. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. They carry a lifetime warranty against defects and breakage. --Fred Brack
