Global knives are always tops for reliability and durability, and they are the only knives I use. This particular set gives pretty much all the average household will need, and they require little maintanence. The two knives I found most useful are the Chef's knife, which is the one you will use the most, and the bread knife. The Chef's knife is lightweight and razor sharp, and can be used for anything, from cutting tough meats to finely chopping viggies. The bread knife is excellent because it doesn't dull as quickly as most bread knives tend to. Nothing kills me more than a fresh loaf of bread getting crushed because the knife wasn't sharp enough to cut from the top. The other knives in the set, such as the carving and paring knives, are also very useful, depending on what you are cooking. All knives in the set come with Global's trademark handel grip, which makes gripping the knife easy, and there is less chance of the knife slipping, possibly lopping off a finger. You can't beat that. For the price, this is quite possibly the best knife set you can buy. The knives are top quality, and will require only the occasional sharpening. For someone who is considering a career as a professional chef, this set is indespensible. But for any household, this is also a great and practical investment.
Description of Global G-500/ST - 5 Piece Kitchen Starter Knife SetHigh tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than high-carbon stainless-steel knives. Edges are ground razor-sharp at a more acute angle than traditional European-style knives. Although Global also makes a "heavyweight" line, its original knives--of which the five knives in this set are examples--have thinner blades and are lighter than traditional knives. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety. Stainless-steel handles are molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. These five knives--8-inch chef's, 8-1/4-inch carving, 8-3/4-inch bread, 5-1/2-inch cook's, 4-inch paring--equip a cook to perform nearly all kitchen tasks. The two smaller knives' wedge-shaped handles are particularly well engineered for grasping securely with a relaxed hand. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener.
