I was getting tired of my Wuesthof chef's knife when I came upon this beauty. The grip is perfect for small hands like mine, and even my husband whose got a large grip found the knife to be comfortable. The nubbies allow for a good hold on the knife, even when wet. The blade is thinner than my Wuestof, and it slices through everything 'like buttah'--very little effort at all! The knife is nicely balanced which adds to an overall great package.

It's a splurge, but if you love cooking and find pleasure in building a beautiful meal, then this knife is for you.

I do not own the chef's knife, but i do have other global knives. Having worked in a few high scale resteraunts i realize the importance of sharp, well balanced knives, and this is it. I would not recomend global knives for industrial use, only because i would not trust half of the people i have encountered in the buisness to use and take care of them properly. but for the chef at home these knives are a dream. the edge they arrive with can slice a carrot round paper thin, and they keep that edge! have fun with your global knives, i know i have!

I have always had cheap knives and I decided to check out what everyone was raving about with this knife. WOW! I used to cut carrots and have to reach my forefinger over the back of the knife blade to keep each carrot piece from flying across the room as I cut it. This thing just glides through the carrot and the pieces stay on the cutting board. The first time I cut a potato I got so excited, my wife thought I was nuts. I kept oohing and ahhing. It just glides right through. And it looks like it will last forever..

Of all the knives of whatever type I have that fill up my 24" knife rack, this is the one I reach to first. It's razor sharp, not too heavy for me, feels good in my hand, easy to sharpen, and can cut a tomato through the skin totally effortlessly which is the ultimate test for me. I noticed a couple of tv chefs are using them now; they stand out by their design. I probably will get one a little larger, while it will slam a garlic clove for me, I like it a little wider. Very very heppy, recommend 100%.

This knife was by far the best investment I have made in my kitchen after my fridge. I use it for everything and it is the sharpest knife I have ever seen. It could easily cut through human bone. I would definitely reccommend purchasing the ceramic global knife sharpener to keep the blade up. While $40 does seem like a lot for a knife sharpener it instantly brought my knife back up to its original sharpness after being dulled by six months of use. Can't wait to add another Global knife to my arsenol.
