This is one of the first global knives I bought. I loved it the first time I held it in my hands. What impressed me most was the perfect balance, the lightweight, and the sharpness. However, what may be perfect for me may not be perfect for you. I'd recommend anyone who is shopping for cutlery to go to a store and try how the knife feels in your hands before buying. And if you can borrow from a friend to try, that's even better.

Having used this knife for several years now, my initial impressions haven't changed. This is still my favorite knife for most tasks. I maintain it regularly with a steel and it is as sharp as it ever was. I have found though that for certain tasks like cutting slits into an onion for dicing or cutting root vegetables, I do prefer a heavier knife (that's why I bought another forged global knife), but that is just personal preference. All in all, a great general purpose kitchen knife.

After buying and discarding cheap knife after cheap knife I bought a Global 8" Chef's knife. It's a fabulous work of art and a real pleasure to use. It looks and feels like quality. One thing to beware of though. The blade edge is fairly delicate. Don't do what I did and try and chop through a lobster claw. That was real dumb of me because it took a couple of chips out of the blade. Obviously it isn't made for that kind of use. All wasn't lost though - as I thought it was at first. I got the name of Morty The Knife Man in NY from the Global web site. Apparently he sharpens knives for many NY restaurants. I sent it to him and it was returned just a couple of days later splendidly sharpened and like brand new again for around $12 including postage. Treated right this knife should last a lifetime.

I don't know too much about cooking - I'm just starting to get into it really. Up until now the knife block that got me through college was a $30 Chefsmate from Target (really, really terrible - won't cut anything!) Even my mother didn't have very good knives so I've never experienced anything like what I experienced today when I sliced into a lemon with my new G2...It just fell apart - without any force....I was shocked. I can't compare this to any of the other gourmet knives - I bought this one because it was supposedly lighter and smaller handled. And hey, the hot industrial design doesn't hurt :) My new favorite piece of equipment in the kitchen...I was going to buy a food processor, but - at least for now - I'm looking forward to doing all my own chopping :)

Gorgeous blade this knife cuts extremely well but there is one thing that i did not like about it and it is that as many others said about this knife line is that they are a bit small and it can be difficult to hold if you (like me have big hands) at first the light weight felt odd because i am used to the heaver western ones, others have brought up the packaging is horrible it is a zip tie can make it difficult to remove, and if your not careful you can really hurt your self fortunately i did not but just watch what your doing when taking these raze sharp blades out of the box. if you want a heaver and bigger one go the the Shun Ken Onion series yes they are twice as much but they are eazer to hold if you got large hands or prefer are heaver knife.

got this knife in a 3 knife set for x-mas two years ago. wonderful! can't believe i can slice onions so thinly and actually mince herbs or garlic without having to use a food processor. I'm not a professional chef and i haven't tried the gammut of other expensive knives, but i've been very happy with these. I use this chef knife and teh paring knife almost exclusively for my cooking and they're still sharp (could probably use some sharpening). The medium sized knife i got (which i think was for veggies) got dull very quickly, which is why i don't use it. i'm sure as soon as i sharpen it up, i'll find myself reaching for that one too.

wonderful christmas gift. makes my cooking faster and more fun. hope to add to my collection soon!
