Much like previous reviewer Stephen Green, I used to be a German knife snob -- nothing would get between me and my Wusthof 8" chef (I have two: one with grantons and one without). These days, I would feel naked without my Global G-2. It has become my primary knife at work and if you are using a knife days at a time, you get a wee-bit particular, if not peculiar. Precise balance, light weight, narrow blade angle, and very hard steel (a Rockwell of HRC 56 - 58) make Global knives what they are. I also keep a G-5 vegetable knife at my station. Between the two, my Wusthofs gets very little playing time, excepting those occasions where I need to break chicken bones or something else inappropriate for the Global. Go Global and you'll never look back.
By the way, if you do get a Global, do get a proper sharpening steel for it. You'll find that many knife steels will not be appropriate for a very hard steel knife like a Global. Oh, and get a whetstone and learn how to use it -- you'll need it. No matter how great the knife, it is in keeping it sharp that it remains a useful tool.

I've been using a Wüsthof Culinar 8-Inch Cook's Knife for the last 3+ years. It's been a good knife but has not kept it's edge as much as I would have liked. I was also just getting into cooking 4 years ago. Now, I had the opportunity to choose the knife that fits how I cook and want to grow in the kitchen.
This knife is sharp. Very sharp. If you do research on knives you'll find that Global knives are sharpened straight and not beveled like most German knives. Meaning that the angle is very steep. The knife is light weight. Holding this compared to my Culinar is like night and day. This knife will take over all chopping and slicing duties in my kitchen from now on.
So, to summarize, these are the biggest selling points to me:
- very sharp
- keeps it's edge longer than most knives
- light weight
- inexpensive compared to comparable German knives
- looks cool

I have never written a review for Amazon...which is saying a lot considering how much I shop here. But I have to tell you, Global knives are fantastic!
Reasons:
Super Lightweight...great if you have any kind of carpal tunnel problems in your wrist/arm.
All once piece for easy cleaning...handle can not break off or hide food/germs.
Wondeful for petite people with small hands.
Blade isn't just super sharp, but also very very thin so you can cut anything paper thin with ease.
Stays sharp for a ridicously long time.
Totally worth the money.
Just this one knife would be better to own than an entire knife block set of cheaper knives.
I have a full set of knives and just this one global and it's the only knife I use now. Once you use it, you can't go back!
I hate using knives at other people's homes now.
I can't say enough good things about this brand of knives. They do look a little modern for my taste, but I got over that quickly.
Customer Review: Clean and Balanced Summary: 5 Stars
I got my first knife set almost 3 years ago for Christmas, and the knife I use the most out of that amazing set is the chef's knife. The only upkeep I have done on it is a steel, done religiously after cleaning, and the knife has stayed sharp, though by now it could use a sharpening. Even so, it can still slice a tomatoe.
I wear a medium glove, but I have slightly long, skinny fingers, and the knife is very comfortable in my hands. I use it mainly for vegetables, but have carved turkeys and sliced steaks, roasts, and pork loins. It is sturdy enough to chop a fat red onion, and still balanced enough to chop leafy parts of green onions, and to chop up herbs as well. I even use it for small stuff, like mincing garlic.
The test of a chef's knife is handling the daily duties of the cook, and my idea of what a chef's knife should be may not be the same as yours, but I would get another one if stolen, and I may replace my current bread knife with a Global one, as well.
Customer Review: Good Balance, easy to sharpen, ugly as sin. Summary: 5 Stars
I originally bought this knife because one of the chefs at the restaurant I work at had one. I picked it up one day and the lightness and balance blew my mind. A couple weeks later I bought my own as well as a ceramic water sharpener.
I have no idea what that other guy must be doing to his knife but my blade sharpens very easily and stays sharp for months as long as you don't abuse it. By far my favorite knife that I have used.
One warning though: if you are going to do a large amount of chopping (like say you're a prep cook or you make Thanksgiving-like dinners twice a month) then the angled shape of the back of the blade may rub the side of your knife-hand index finger the wrong way. I cook fairly elaborate meals almost everyday and have only been irritated by the shape a few times under heavy chopping regimes but it is something to consider.
Overall I couldn't love this knife more. It's the most important kitchen tool I have ever owned.
