Kitchen and Housewares Reviews of Global G-2 - 8 inch, 20cm Chef's Knife

Customer Review: A great knife to get you out of the kitchen fast
Summary: 5 Stars

I admit it. I hate to cook. This is why I like to have really good kitchen tools. I like tools that work fast and clean easily.

This is possibly the best knife on the planet. I am so pleased with this knife that I am giving away my formerly indespensible Henckel chef's knife. You have to cut with the Global knife yourself to realize how effortless kitchen tasks can be with the right tool.

I gave this knife a trial run on Thanksgiving. I was so surprised at how easily it cut through vegetables, that I insisted that my husband try it. I handed him a very thick carrot and suggested that he start at the thickest part. He was equally surprised at how little effort it took to use this knife.

I prepared all of the vegetables, carved the turkey and sliced the bread with this knife. It held its edge beautifully. I did need to sharpen it to cut through some over-ripe tomatoes the next day, but with just a few swipes through the sharpener the knife was once again razor sharp and ready for precision cutting.

Actually, I'm so pleased with this knife that I've added a smaller vegetable knife and a bread knife from the same line to my holiday wish list. Who knew that it would take a fine kitchen tool to help me spend LESS time in the kitchen?

Customer Review: Globals are so good it hurts.
Summary: 5 Stars

My Globals are so good it hurts my heart to know that there goes another few minutes off of their lifes with each use. Even if the edge stays for fifty years, I am still going to be as frugal with their usage as I am now. I used to use my 8" chef knife for everything: chopping onions, slicing and dicing tomatoes, any veggie for that matter, and all the way to trimming and filleting meats from beef to ahi. On that note this knife maintains it's edge for years with proper sharpening. All I use are my diamond and ceramic rods.

I started getting paranoid about the edge so I bought a few other Globals so that I could have a few to pick and choose from. Now I have vegetable knives, serrated's, paring, and chef's knives. All of which I love. I could scale eveything back to the chef knife, but why.

Anyway, to the main point to all of this is the 8" chef knife is the best universal knife I have ever used. The handle is thinner than most German knives so you may have to change your grip. The way the knife is designed is for the person to learn smooth accurate cuts combined with speed. A highly technical knife.

Make sure your arsenal is full and ready for war.

Customer Review: The best knife I've ever used, hands down
Summary: 5 Stars

Where to start. I recently graduated from college, and still had my cheap, dull, second-hand knives that I used. I wanted to buy a good knife that would be good for a large number of uses, and one that would last me a long time. A beginning to a lifetime set, if you will. I did some research, and kept coming back to the Global knives. They're a little pricey, but man, its worth every penny.

Right out of the box, it had an edge that amazed me. Its got great balance, great quality, and best of all, great style. My girlfriend's first remark was, "That looks like some serial killer knife." I didn't notice it until afterwards, but they're the same knives that Patrick Bateman uses in American Psycho. Go figure.

I've used this knife for pretty much everything. For fish you can get perfect slices without any damage whatsoever to delicate flesh. But it really shines with tomatoes. I can take a super-ripe tomato and slice it into thin slices without causing the insides to gush all over, it just slides right through.

Bottom line, if you're looking for a great knife and don't mind spending an extra few bucks for quality, get this knife. You won't be disappointed.

Customer Review: The perfect knife for anyone who cooks anything.
Summary: 5 Stars

Global knives are the only knives I would have in my kitchen. In terms of comfort, durability, and performance, Global makes the best knives I have ever used.

The light weight of the knife allows for easy chopping without the wrist strain that heavier chef's knives tend to give. The grip is comfortable, making the knife easy to grasp without slipping, and the blade only needs the occasional sharpening. I use mine for all sorts of duties, like chopping veggies, crushing garlic, and even slicing through tough meats. This particular knife has never let me down, and it could cut through a shoe and still slice a tomato paper thin. And with the aformentioned qualities, it makes any novice slice like a pro.

The price might seem a bit high, but when you think about the durability of this particular knife when compared to less expensive, lesser quality knives, you can see why it is worth the extra money. A cheaper quality knife will dull, ship, or even break over time, meaning that it will need to be replaced more often. You might as well get a better knife. This is the one I would recommend, and myself and my friends use it, and we have no complaints.

Customer Review: Excellent edge, some design flaws
Summary: 4 Stars

I baught my 8" global chef's knife about 5 years ago. It has been of great use in the kitchen and remains one of my favorite knives on the market. The molybdenum/vanadium steel of the global knives holds an edge far longer than its Henkles/Wustolf counterparts. My only complaint is the handle design which does not suit my gripping style, nor my large hands. I don't mind the steel handles, although they do contribute to slippage and some loss of grip. My main problem is with the tapered bolster, which is almost a lack of bolster altogether. Coupled with the thin spine and heal of the knife, extended use can be uncomfortable for the hand.

I highly recommend globals, but I might suggest the 8 1/4" heavyweight model, which appears to have a more standard handle design and less tapering to the Bolster.

For more info on knife handling and care you might check out the CIA's book titled "The Professional Chef's Knife Kit".

And one last comment. Although all knife companies like to claim their knives are dishwasher safe, please, PLEASE, don't put your knives in the dishwasher.
