The special materials used in this pan make it a bit finicky. The manufacturer suggests cooking over medium heat at the highest; the grill pan conducts heat well but will require a few minutes of preheating, especially for searing meats. The pan is intended only for gas and electric ranges; it could damage ceramic hob or flat-top cooking surfaces. You can slip the pan without the lid into the oven up to 390 degrees F; the lid can only withstand 325 degrees F. This pan is not recommended for the dishwasher, so count on washing it by hand with hot, soapy water. --Cynthia Nims
