Though I am a pretty basic cook (I can boil water; scrambled eggs are my specialty), the fear that many people have of pressure cookers should be laid to rest with this Fagor. Once you get the hang of it, cooking is as simple as putting all in the pot, closing it, making sure the dial is pointed to "cook" and the lid snap is closed, putting it on the heat and wait for the little yellow bobbie thing to pop up so you can turn down the heat and start your timer. If there's too much steam this mighty device releases it safely. Even I can do it! Some foods are easier than others, but if you want to create a quick, healthy chicken soup, this is your weapon!

Having grown up with an old-school pressure cooker (tic-tic-tic), I was a little reluctant to make the switch to this new-fangled gadget. However, I was hooked after the first few quick and easy meals that I wouldn't have tried in the old one. In a word: BEANS. The foaming problem that can make such a mess in the old models is almost perfectly solved by the new pressure release system. Once it comes up to pressure, you can reduce the heat and keep everything going without spurting steam all over the place. The little yellow button stays up - you know when the cooker is pressurized and can adjust the heat to keep things moving along. Works like a charm.

I'm very pleased with this, my first pressure cooker. It really does make quick work of some great recipes. So far I've successfully made beef stews (1 - 1.5 hours), risotto (7 minutes), and even homemade chicken stock (1 - 1.5 hours) in far less time than other methods.
However, note that this particular model does NOT come with a "stainless-steel steamer basket and trivet", despite the Amazon product description. The pressure cooker does, however, come with a little insert that lets you order the steamer/trivet from Fagor for $10. I decided to pass on it, I have a little general-purpose steamer basket that I can throw in instead.

I have used my new pressure cooker three times. I have cooked pinto beans each time as we make homemade refried beans on a regular basis. I start with fresh beans with salted water and we have fully cooked beans in a little over an hour. The cooker itself works really well and the 6 quart size is just right for our family of 4. It is very easy to use and clean, too! The only downfall is that it isn't as quiet as I would have liked it to be, but it is quieter than the one I had before, which was 11 years old. It's a great product for the price, and if you don't want to spend $200 on the top of the line, this one is a close second place.

I have always wanted to try a pressure cooker, but was afraid - heard too many stories about unwanted explosions etc. After seeing Emeril Lagasse use one, assuring the audience of safety..I decided to buy one. What a great kitchen item this cooker is! It's just the right size for my family and I can't believe how fast it cooks..it's amazing. It also has great safety features which are pretty well foolproof. It's heavy gauge stainless steel, so it's extremely durable..and the gasket is easily available on Amazon. It's not often that I find something that is a really worthwhile addition to my kitchen..and this cooker certainly is!
