This is not so easy to use. Do not buy it thinking you can easily prepare large birds...NOT BIG ENOUGH FOR LARGE HOLIDAY TURKEYS! The reason I bought this thing was to cook turkey, goose and duck (not to mention the reconditioned price seemed like quite a deal) especially to get most of the fat out. Your average turkey bought in the store is between 12 and 18 lbs. So I got a 13 lb turkey...below the limit of 15 lbs recommended and tied it up as recommended. Then I tried over and over to put it on the spits so it was properly centered. THIS WAS IMPOSSIBLE! I spent nearly an hour trying to make the bird fit. You see, you have to make sure that none of the bird touches the heat shield or heating elements (which are in the rear...so you don't get much smoke..good for indoors..but won't add that nice extra flavor of food cooked with its own juices smoking off from below) and leaves space for the bird to be free to rotate. You tie it and put it on the spit...put it in the oven...set it in place...and then turn it on to see if it is spinning freely and not touching the elements. If not, you take it out and pull it off the spit and try to re-center it. This usually loossens the ties so you start tying all over again...with a potentially salmonella-covered slippery bird in hand...trying not to touch any other surfaces so as to prevent contamination and prevent foodborne illness. Thus, the spit has to be centered correctly AND the bird must be tied tight in more than the three spots recommended. A straight jacket would have been better - on me too because it was EXTREMELY frustrating. The oven is simply very tight and the slippage on the spit caused by the weight of the bird makes it impossible to keep a big bird from touching. I figured out a TEN LB. TURKEY/GOOSE MAX! is about the most you can make fit. Even then, this took me 30 minutes of screwing around to make sure it was not touching. As for the result, the food is cooked beautifully. The duck was great! But, with the goose...there was so much run-off, the small catch tray on the bottom overflowed and WHAT A MESS! I recommend putting fork holes in the thickest skin to allow the fat to drip off more AND put the oven in a large aluminum roasting pan to catch any excess fat if you are cooking larger fatty foods. Steaks and roasts were good. But so much work on large birds! Then lots of sanitizing to clean everything the poultry touched when raw....I would not send it back...but I would try using the rotisserie on my outdoor grill first...more room for turkeys...and with the heat coming from below on the outdoor grill...you get a smoky flavor. Consider the stroage space you have in your kitchen too...the unit does take a bit of space.
