I got to do a great testing of this egg cracker this morning because I made 2 deep dish quiches...so I cracked a dozen eggs back-to-back. Because of this, I decided to test it out with pressing hard, light, etc. just for a full test.
Postives: This breaks an egg cleanly and there are some recipes, such as a meringue, where any yolk that gets in the whites can prevent it from whipping up properly. If you don't have a clean break, then the shells can get into the yolk, break it open, and ruin your meringue. Any shells in any recipe are a negative, however, obviously.
It's also great if you have kids old enough to help you with cooking. That is always the hardest part for me in showing kids how to cook...the egg breaking. Although this does have a small blade, your hand doesn't get near it when holding the egg but you should know, going in, that it's on there so your kids don't play with the gadget. It does have a cover over the blade.
It also is an alternative to breaking your eggs on the side of your pan or countertop. Doing so may mean leaving salmonella behind whereas this gets thrown right in the dishwasher. It also prevents eggs dripping down your pan under your hard-to-clean burners if you typically break them on your pan.
Allows you to master the "one handed egg break". Stir with one hand crack with another...
Negatives: I like this a lot as I cook with eggs so much that I have had 3 discussions about getting my own chicken. I am not kidding. If I didn't think the coyotes behind my house would get into a chicken coop, I'd be all out hen-raising until my neighbors realized the squaking wasn't coming from us. However, that said, there is one thing I would change if I could. I would remove the bottom stand and have it just be a short piece that I could keep in my drawer beside my stove, open when I need to crack an egg on it and use it...Since I am the uber collector of kitchen gadgets, any extra room taken up in my drawer that already is full of kitchen gadgets is detrimental to my organization sanity. But that's just me. I would like it more "squatty". It also should be known that, in my test this morning, if you slam an egg down with some strength, you are still gonna have some issues. I don't think anyone would do that but a child or new cook might so I'll just throw it out there since I tested cracking the egg all different ways. It worked perfectly every time except when I used too much force.
Bottom line: To master the art of egg cracking, it's the real deal.If it was more like a measuring cup size with the same top, it would fit upright right in a drawer which would be even more convenient.
