I need to remind myself sometimes to look at things in the context of what they sell for. It ain't a pro deli slicer nor does it pretend to be.
The Model 610 is good value for the money and for occasional home use. Just a few points not mentioned in other reviews:
1) The unit is noisier than what I had expected. With that aside, it has plenty of power and the motor did not labor while slicing meat.
2) The feed carriage adjustment is not precise. It tends to back out when simply dialed to a detent setting resulting in a thicker a slice than intended. I learned by using it that the most positive thickenss setting should be done while putting a slight force on the meat toward the blade(to remove any backlash in the carriage slide)while setting the thickness knob.
I rated it a 4 out of 5 because ot the noise. It baffles me how what appears to be Nylon gearing can make such a racket. Then again, I'm not running a deli.

I bought this slicer a few weeks ago and have used it on a variety of charcuterie (cured, brined and smoked) items I've done. Overall, the unit is serviceable and reasonably well-made. It has sliced everything I've thrown at it without too much trouble. The slice quality, however, often suffers at the trailing edge of the unsliced block, producing an ugly wad that has to be either discarded or sliced manually. The slide mechanism also does not handle longer items well, like bacon or pastrami...one has to hold those with something in addition to the lateral pusher to feed them evenly into the blade. Lastly, cleanup of the unit is not particularly easy, even dangerous with the required hand washing of even the blad as none of the parts is dishwasher safe.
In summary, there are some significant design flaws with this unit, but it still performs adequately once one gets used to its operation. For $100, it's about what one would expect.
Customer Review: Even Better Than I Expected Summary: 5 Stars
I received my slicer about two weeks ago and immediately used it to slice a 3 ft. long bulk summer sausage. It was a breeze. I had never used a slicer before and I was very pleased with the sturdiness of the machine (it is not all plastic) and the ease of use. The slicer tray moves effortlessly and smoothly. The adjustment on the blade is excellent, going from very fine to very thick. It was a breeze to clean up, as it comes apart for cleaning and the instructions that came with it were detailed and accurate. I did purchase the smooth blade so I could get the thin deli slices, based on other reviews I read before I made my purchase. I have since sliced bulk pork roll with it as well and I am just as impressed. I am looking forward to slicing pot roast and a ham that I plan to make next week. I would highly recommend this product for anyone who is looking for a good home slicer. It is a good value for the price.
Customer Review: Solid slicer for the money Summary: 5 Stars
Years ago I worked at a grocery store and used a professional slicer, and for $100 I did not expect this slicer to compare. Frankly it is not in that range, but before I bought this one I tried out a Waring slicer that was about $20 less. This slicer works and feels much more like the professional slicer and is well worth the extra money for a starting slicer.
We bought the slicer primarily for slicing up sandwich meat, and it is working very well. After trying the Waring, I was not expecting that much better from this product. The Waring 150 motor started to smell hot fairly quickly, it moved all around on the counter, and it had a lot of plastic pieces.
The Chef's Choice is much more solid with a lot more metal. It tears down nicely. It cut nicely, and while the blade does not spin very fast, the motor still handled a full ham without overheating.
I am very pleased with it.
Customer Review: Good Value Summary: 4 Stars
To temper B. Feldman's review (the first in the list); I give this a good value. It does a good job of slicing for sure but Feldman caused me disappointment. I bought this with a whole prechuto in the refrigerator to slice and everybody knows prechuto needs sliced "paper thin" for sure. Contrary to Feldman's review, paper thin is at best a challenge with this slicer. I ended up with ham jerky; it's the best it can do, thin wise.
So if you don't need paper thin, this is the best value I found, does a great job and does clean up in a snap. I find that the fence isn't rigid enough to keep the tolerances of thinner slicing. So to be referring to it as anything like professional is over stated.
Don't let this review discourage your purchase for your kitchen unless your a prechuto fan; for that reach much deeper in your pockets. I just thought Feldman really over stated the machine.
