We bought an Excalibur 3926T dehydrator a month ago and needed a food slicer to keep size of the food we were dehydrating uniform. This food slicer met our expectations on ease of use and cleaning. It's well built and should give us many years of constant use.
This is not a complicated piece of machinery that takes an advanced degree to use. Most of the unit is pretty intuitive. Select the size of the slice and slice. You still need to read all the instructions just to make sure you understand all the features.
Cleaning is easy. It takes a quarter to unscrew the blade from the unit instead of having to scrounge around for a tool. We wipe the parts that can't be immersed in water and wash the rest. We hand wash the blade since there is a grease line on the back of the blade we didn't want to wash off.
We move the food slicer to the table when we have a lot of food to slice for the dehydrator. I thought it would be bulky to move around the kitchen and was pleased to find just the opposite. It's easy to pick up and move.
Overall, we're pleased with this unit. It arrived earlier than expected and that was an added bonus.

I slice a roast beef every week or so for sandwiches, plus 4 or 5 loaves of homemade bread. This is a very nice unit for the price. Seems very well put together, and much more solid than I expected, even though lightweight enough to move around easily.
Other reviewers mentioned they didn't like the plastic screw that holds in the blade - - I see no problem at all, so long as you're reasonably careful assembling/disassembling the unit for cleaning (i.e., don't overtighten it).
As another reviewer mentioned, cleanup is a pain (for example, after a roast beef), but not bad as a home slicer goes. I don't really need to clean it up after bread, I just brush off the crumbs.
I also like the fact that the tray locks into position in front of the blade when not in use - a very nice safety feature if you leave the unit sitting out.
This is probably not a unit for a deli or any sort of production kitchen. But for a user like me, I would definitely recommend it.
The purchase was trouble-free, and the unit arrived on time.

The 610 is my first food slicer. I use it to thinly slice meat such as an inexpensive cross rib roast (on sale at $1.79/LB). I was surprised how well it worked. It was as smooth as silk in creating as thin a slice of RB as desired. You simply dial in the thickness and each slice comes out the same.
The blade is highly geared and turned slowly but slices very smoothly. It makes little noise and is not scary at all, unlike a table saw. The machine is almost all metal and quite heavy. The rubber feet and the weight keeps the machine glued to our tile counter. The only plastic parts are in the feeder.
Cleaning is a bit messy. You can't use the dish washer. You must remove the feed platform and remove the blade. Because there is a lot of greased parts, you can't dunk any of the parts in hot soapy water. Instead you need to wipe off the fatty debris and then carefully hand wash the part while trying not to remove any of the mechanical grease. I used 4 paper towels to complete the job. You don't want to use this machine for a few slices of cheese.

I bought this slicer because of the mostly rave reviews I read and for the money it is a very good deal. I was replacing my mother's all stainless steel machine that was as old as the hills but the screw would no longer hold the blade in place. What I love about this machine is that the blade is sharp, and the design allowing me to place a platter underneath the area where the slices come out is great. It cleaned up easily and I'm overall happy. The one shortcoming I found is that the carriage that held my roast was just the slighest bit too far away from the blade and I could not get "full" thin slices. The roast developed a tail that stuck out the back. But other than that the slices were thin and uniform which adds to the taste of a good roast. My one quarrel with the manufacturer of the machine is that there was a thick white lubricating grease on the cog of the blade that is impossible to wash off entirely and got all over when I removed the blade for cleaning. This will ultimately disappear but in spite of my best effort I still see some smudging on the blade.

After reading the reviews here on Amazon.com, I decided to purchase this unit. I had seen it slightly cheaper somewhere else, but thought I'd go with amazon. I was all ready to purchase another unit, but nearly every reviewer complained about the time it took to clean. This slicer cleans relatively quickly, without too many tiny nooks and crannies to get juices and meat parts jammed in.
The motor was a little slower than I had expected, but maybe that's because the only other slicer I had ever operated was in a deli in NYC and that was obviously a professional unit.
There's a little flex in the support plate, so if you push a little too hard, the food you're slicing may suddenly come out slightly thicker for that slice or two until you realize what's happening.
I purchased this slicer to make it easier for my wife to make her fantastic cole slaw. Consistently thin slices of cabbage are dang near impossible with a knife. This slicer does it very well.
I would highly recommend this Chef's Choice slicer.
