Customer Review: Great bang for the buck!

As many others on here have done, I have researched meat slicers extensively before deciding to purchase the Chef's Choice 610 Food Slicer. It is the only slicer I've found so far that has an overall great rating. I actually wanted to see it in the store first before buying it, but no one in my area keeps this item in stock. So, I trusted the reviews and was ready to purchase it online. Using Google, I was able to find it for $99.00 and it included a FREE non-serrated blade ($25 value). Now THAT'S a deal! I went to the website to purchase and they happened to have a VIDEO demonstration. After watching the video, I was convinced and purchased one immediately. For all of you who would like to see the video, you can find it at the homepage for HSN (Home Shopping Network).

There are several things that the video points out, which makes this a better slicer than the competition.

1) The blade is GEAR driven, not belt driven like some competitors. That means there will be no slipping of the blade due to slipping of the belt.

2) This unit is designed to run continuously. Some of the others can only be run for 10 minutes at a time before you have to shut them down to cool off.

3) The backing plate that holds the food (the one that moves forward and back to create the different thickness of cuts) is METAL, not plastic. Plastic ones will bend when you put the slightest pressure on them, effectively giving you uneven slices.

I received the slicer yesterday. I immediately tried to slice a chunk of hard parmesan reggiano cheese with the serrated blade. It worked great! I was able to slice so thin that I could literally see through the slice. I noticed two things:

1) The blade turns unexpectedly slow, yet cuts perfect. I believe it turns at a rate of about 1.5 revolutions per second.

2) The motor did appear to "bog down" a little bit while cutting this hard cheese. The slower you cut the cheese, the less it bogs down. But nonetheless, it cut right through it no problem.

Next, I wanted to try beef for beef jerky, which is the exact reason why I wanted a meat slicer! So I bought a 1.5 inch thick piece of top round. After trimming off the fat, I cut the steak into 2 chunks to make the slicing easier. I also switched to the non-serrated blade (by recommendation of other reviewers, the video, etc.)

Now everyone states to freeze the meat for a while before attempting to cut it. Well I wanted to witness firsthand what would happen if I didn't.

Bottom line: Freeze the meat first. I found that about 2 hours worked quite well. You DON'T want it frozen solid, although some reviews stated they have cut rock solid frozen meat just fine.

If you do not freeze the meat, this is what happens. Since the meat is quite flexible and droopy because it's raw, as you approach the blade while slicing, it droops down and although you can create slices, there's always a portion of the bottom of the meat that remains unsliced (because it drooped down and avoided the blade). So after 2-3 slices, if you look at the steak, you will see a flap of meat beginning to form at the bottom. The more you slice, the bigger the flap.

Once you freeze the meat, it is somewhat rigid and will not droop, therefore it cuts perfect and there is no flap that forms.

I was absolutely amazed at how fast this thing cut through the partially frozen steak. It was almost TOO fast, like butter! I sliced through 2.5 pounds of steak in under 2 minutes.

The one suggestion I do have for everyone trying this is that you MUST be sure the piece of steak, cheese, etc you are cutting has parallel surfaces (the edge you are cutting must be parallel to the edge that the pushing guide rests against). I had a piece of steak that was triangular... and using the pushing guide was impossible. For that I was careful and guided the meat with my hand, up until about the last inch or so. Then I popped on the pushing guide and continued effortlessly.

Cleanup was a snap. I don't know how all these reviewers took 20-40 minutes to clean it. It took me *maybe* 5 minutes to clean it. The pushing guide assembly slides right off. The backing plate pops off easily. The blade comes off in seconds. And the little plastic black slice guide (at the bottom of the blade) simply pulls out. I washed each piece by hand, including the blade. I quickly sponged off the base (not much to actually clean there). After drying with a paper towel, I reassembled in 30 seconds and was ready to pack it away.

For $99, one cannot go wrong with this slicer! It actually took me longer to clean than it did to slice 2.5 pounds of meat and cleanup was under 5 minutes!

Simply amazing!
