It has impressive performance and will reach baking temperature in 15 minutes. The JA28 features Doyon?s patented Jet Air System. The system works by moving air in one direction for 2-1/2 minutes, stopping for 25 seconds, then moving air the other direction for 2-1/2 minutes. The air circulation allows products to bake more evenly than in competitor?s units. Doyon?s 72" Electric Convection Oven is versatile enough to work in many commercial foodservice establishments.
