Kitchen and Housewares Reviews of Cutco Homemaker + 8 Steak Knives #2018cCustomer Review: Overpriced, with very misleading marketing Summary: 1 Stars
Despite of what Cutco sales reps and marketing may claim in their statements, the reality is that Cutco knives are severely overpriced and their price/performance ration is plain horrible.
For[..] that this set costs, you could buy several high end knives, chef's, paring, slicer, bread, boning and each would outperform Cutco by many to one. You'd still have change left for the block or extra knives you really need, not what's included in the set.
For starters, Cutco uses 440A type steel in their knives. That is the cheapest and worst performer for knife blades out of all 3 in 440 group of steels(440A, 440B, 440C).
For more just check the knife steel FAQ -[...]
Any mainstream knife maker such as Henckel, Wusthof, Messermeister, Chef's Choice (100% US brand), Global, use better steel and better heat treatment as well. I won't even mention high end Japanese knives, which aren't that much expensive than cutcos.
Cutco knives are hardened to 54-56HRC. 440A at that hardness isn't going to hold any acceptable edge. Which is why you'd have to grind thick edge or have serrated knives.
For comparison, better kitchen knives are 58HRC and above, with really good pieces having hardness of 63-67HRC. Translated into simple terms, those knives will have much thinner edge, cut a lot better and keep sharp edge for longer periods of time.
You get around 40-50 degree edge on cutcos, pretty good for an axe or combat knife, but a good kitchen knife unless it's for boning or related job, rarely needs an edge above 30deg. You loose that much cutting ability.
Cutco's Double-D is just another type of serrated edge, no matter what Cutco claims about its uniqueness. And "best part" is that you can't sharpen it at home.
Anybody who used and sharpened a sharp knife wouldn't believe the claim that any edge can last 7 years or even 1 year without sharpening. Especially the one made of 440A steel with 56HRC. That is a joke to any knifemaker, metallurgist or just knife enthusiast.
To those who complain about knife snobs, well, get a good knife first...
Stamped knives work just as well as forged ones, no argument there, but depends what steel is used and how it is heat treated. Stamped Globals outperform stamped Cutcos significantly, they hold the edge better than cutcos, they cut better. And that's the Global which is just 58HRC.
US made Chef's choice Trizor blades are 60HRC, with far better steel too.
It's not very smart to call people socialists because the dislike certain product, and it's even less smart to support inferior product and base all your decision on marketing claims.
