Customer Review: Think Ahead, Be Creative

Produces fine yogurt with little fuss in about 1 hour prep time (heating, cooling, to machine). I have found two improvements I would like to see. ONE: The recipe/directions should be written to accommodate all 8 jars, not just six. (What were these people thinking?) I add extra FF milk, and powdered milk to allow for the other 2 cups. TWO: Have the thermometer that is included marked for the HOT point of 190 to 200, and while why not include the tablespoon at the end as well.
I did buy the cheese maker as well, but you get the same result using your gold coffee filter, just a smaller batch. Based on the price of the small Greek style yogurt cups, these two items will pay for themselves in fewer than 10 batches. Be sure to think ahead to your next batch and save some of the yogurt as the starter for the next batch.
Once the whey has dripped from the yogurt, I have used the Greek style yogurt as a spread, in place of sour cream,& in dressings. For flavors I have combined with vanilla, honey, fruit, maple syrup, cinnamon, peanut butter, and even a dark chocolate ganache to produce a tart chocolate mousse. It's really endless.

I have owned this for about 6 months and am very pleased with it. My mother liked it so much that I bought her one too. I usually just keep it in the fridge with yochee "making" all the time. If you have been using a strainer or colander to make yochee, buy this product because it is so much easier, handier, and space-friendly. I really like that it is dishwasher safe. My only complaint is that I can never fit an entire tub of plain yogurt in it... there is always about 1/2 cup leftover that just won't fit. This is annoying. If you are new to yogurt cheese, I definitely recommend you try it--the possibilities are endless and it's great for health-conscious eaters.

To the previous reviewer who had trouble with the yogurt passing through the strainer, it depends on what kind of yogurt you use. If the yogurt contains gelatin then it won't separate and I have found that some store brand yogurts won't work either. In general though, almost all plain yogurts work in the yochee maker, Specifically, I have had dependable results with Dannon's Fat Free Plain Yogurt.

Customer Review: I use coffee filters

I've been straining my yogurt for 10 years now using coffee filters and any old strainer over a bowl. Instuctions below. (I finally bought a coffee filter basket and it works even better now.)

Put the filter over the open quart of yogurt, then place the strainer upside down on top of that. Invert them over a bowl and place in fridge. Save the lid. When its done, put the lid back on.

Another way to do it, if you are unsure about inverting it: use 3 or 4 coffee filters in any strainer over a bowl. Fan the filters out to cover all the holes in the strainer and dump the yogurt in quickly. Use a large bowl or check it and empty it a few times because there is usually a lot of whey.

When the yogurt is done, it easily scrapes off of the coffee filters and leaves no aftertaste.

I often leave it strainer for days, no problems.

If you save the whey and blend it with cheese and spices - it makes a nice dip. Whey is full of good probiotics. Cheese Wiz is full of whey, thats where I got the idea.

When I first received this, I dumped a container of store bought, plain, fat-free yogurt into it. I looked into it a couple of hours later and was dismayed to realize that a bunch of the yogurt had just flowed right through the holes! Not having time to deal with it at the time, I put it back into the fridge and forgot about it...for several days. When I opened it about three days later to dispose of the yogurt, I was shocked to see that there was thick, Greek-style yogurt in the top. Yes, quite a bit had flowed through the holes, but most of it had stayed in the top and strained into Greek yogurt. After taking out the strained, thickened yogurt, I started a new batch with the stuff that had flowed through, and a couple of days later, it was Greek yogurt as well.

Granted, this does take some time, so if you don't have a lot of patience, I'd just go buy the Greek yogurt. However, if you are more interested in saving money or if you are like me, and usually make your own yogurt to strain, this is a perfect item to create your own Greek yogurt. Yum!

I thought this sounded "handy"...well was I in for a surprise! It's a whole lot more than that. I make up a batch of fresh yogurt in my Salton, take out my amount for a new starter, put some in this great yogurt-cheese maker & still have some left for regular yogurt. In the frig 24 hours & the whey is drained off & I have a perfect base for herbs/garlic for a delicious & healthy vegetable dip...or one that satisfies my chip loving husband, or plain as a healthy ingredient in a myriad of dishes including salads & salad dressings, snacks, soups, breads, desserts of all kinds, sandwiches, even main dishes!
I bought this along with "Not Just Cheesecake" & "Eat Well The YoChee Way" & these great books expand this whole new (to me) delicious & healthier way to incorporate homemade yogurt-cheese into countless dishes.
Oftimes we purchase an appliance/kitchen item & use it very little...I think it's essential to have one or two good cookbooks to open up the possibilities for our use! I Do Love my Yogurt- Cheese Maker!!!
