call for yogurt cheese. (On the SCD, we have to be careful to avoid bifidus, which is present in 99% of commercial yogurts, and we also have to ferment our homemade yogurt for 24-34 hours to assure the absence of lactose.)

I was delighted to see my first batch of yogurt cheese! The texture was like cream cheese, and the flavor was similar to cream cheese! I enjoyed the homemade yogurt cheese alone, as well as in the SCD recipes.

The Cuisipro Donvier Yogurt Cheese Maker is a breeze to clean, fits nicely on any refrigerator shelf, and is the best way to separate whey from yogurt that I have encountered. (Straining yogurt through cheesecloth was not only messy, but also did not produce the quality of the Cuisipro Donvier Yogurt Cheese Maker.)

I have used this cheese maker almost every day and now have two so that I can really do more experimenting (like allowing the yogurt to set for a longer period of time without compulsively removing it to "see" what it looks and tastes like -- which is always good, no matter what!
I will point out the best use, for sake of space and time, and that is for those who make their own yogurt. I love the thinner properties of my homemade yogurt but often I would like to have it thicker and this is the way to do it. First (I got this excellent tip from another review) line the bottom of the Donvier sieve with a commercial (low fat, full fat, vanilla) yogurt, like Nancy's, Dannon, Fage Greek, and then pour in your homemade yogurt -- you can start small or fill it up, put the lid on and place in the fridge. Even if you wait only 2-3 hours, the consistency is pretty nice. If you like it, turn it out, stir it up and then do it again. Either with a new batch of home made or putting what you poured out back in (still may not be thick enough to go without a liner, though.) I have finally gotten to the point, where I have made a thick enough home made yogurt (through sieving) where I can use it for a liner.

Also, find a plastic container that is shaped in a square similar in size to the wide part of the sieve. This way you can turn it over and with a slight tap or shake, the yo-cheese plops out into the container without any fuss or mess. That's my favorite part :).

I sometimes use low-fat ricotta cheese as a liner, or mix it in -- and the light sweetness goes well with many desert items and fruits. I could go on and on, but at this price, buy two. If nothing else, you can give to a friend as a great gift! You can be a super busy person and still be able to fit this in...so easy and success is assured every time.

This little item works really well for making yogurt nice and thick. My primary purpose for this product is to make good Greek yogurt, which is much, much thicker than any store bought commercial brand. And, buying "Greek" yogurt from speciality food stores gets really expensive.

This product makes perfect Greek yogurt, in only about 3 or 4 hours. If you leave it overnight, you'll get perfect yogurt cheese. I prefer using Dannon whole milk plain yogurt, and the yogurt strainer holds almost a whole 32 oz container of it. If you wait about half an hour, you can put the rest of the Dannon into the stainer, since enough water (whey) has drained out by then. The results are perfect...delicous thick Greek yogurt each time, without the need for messy cheesecloth, coffee filters, paper towels, etc.

It's very sturdy and cleans up quite easily. I don't put it in the dishwasher, since I'm of the opinion that you shouldn't put anything in the dishwasher that you actually care about. And again, it's so easy to clean with a sponge and some soap, so there's no need to put in the dishwasher.

All in all, terrific product, works better than advertised.

Side note: Do NOT use Stoneybrook "Cream on Top" yogurt. That stuff is ALL water!!! When i poured this yogurt into the strainer, about half of it just ran through the filter almost immediately, since it's just so thin. This did not happen with Dannon, which is probably the thickest commercial yogurt around (but even the Dannon is nowhere near as thick as authentic Greek yogurt). The yogurt strainer works best with thicker yogurts, so stay away from those yogurts that make swishing sounds when you shake the container.

Customer Review: Turns runny, boring homemade yogurt into something special

I made yogurt in my cheap plastic yogurt maker using dannon as a starter, and was unimpressed with the results: which were runny, with a slightly unpleasant sharp flavor. I doubtfully poured that sorta lousy yogurt into this "yogurt cheese maker" and put it in the fridge for 10 hours. The directions say you can leave it up to 24 hours, but I didn't want to make "cheese", I just wanted thicker, better yogurt.

Oh my god, the resulting strained yogurt is incredible. I don't mean just good, I mean incredible. It's smooth and creamy and sweet, it's almost like creme freche. All the unpleasant sharpness went away with the whey (the liquid that strains off) and what's left is absolutely luscious. I enjoy eating it plain, or with just a little sprinkling of dark brown sugar on top.

I tried a second batch and strained it for 12 hours, and it was just as delightful and slightly thicker.

Really, I got this thing hoping that it would help me to make yogurt that would be almost as good as the greek yogurt I buy in the store, but cheaper. Instead, to my delight I find I can make yogurt that's even better than the yogurt I buy in the store. The results far exceeded my expectations.

The strainer itself is slightly larger than I expected, which is good in the end since I'm already thinking about buying a second one so I can make more at a time. It's made of sturdy plastic and attached firmly to the mesh screen. It feels like it will last. Overall, I'm very pleased.

I bought this to separate my organic whole yogurt so I could use the whey to make beet kvass and use the cream cheese instead of sour cream and mayo. This works pretty good as far as ease of use and does a pretty good job of separating the yogurt. They only problem is that it is just a tiny bit too small to pour in the large yogurt I use all at once and also the screen sits too low in the outside container so some of the creamy part gets mixed into the whey, which I don't like. Also, the screen isn't as fine as I would like. I have found a work around for this by only pouring in just a small amount of yogurt first and emptying out the first bit of milky whey (not the candy bar!). Then I pour in the remaining amount and most of it is solid enough so that it separates nicely. I also empty out the whey periodically so the yogurt doesn't 'sit' in the whey in the container. I have used the whey when there is some "cream" in it, but I prefer not to so this works for me. It would be better if the container was deeper so the screen doesn't sit in the whey (which is why I gave it 4 stars instead of 5), but I would still recommend this product. I have not had a problem with the screen rusting as some others have, but my friend (who I purchased one for) did have that issue. Maybe it's because I only use filtered water on it when I wash it and dry it completely afterward.
