Customer Review: Pricey, but very good performance

I got tired of non-stick pans flaking off after 2-3 years of use and was looking for something that had good heat characteristics and the non-stick coating that would last longer. This pan provided the first - heavy and distributes heat very well. The 12" diameter is really pretty big and provides even heating over a 5" diameter gas flame. The first thing I tried making was pot stickers to see how well the heat is distributed. All the pot stickers cooked evenly from the center of the pan to the edges.
Where this pan really shined was searing sea scallops - the non-stick surface worked perfectly without using a lot of oil/butter. Eggs, stir fry noodles, hashbrown potatoes, and veggies all came right off this thing - nothing seem to stick to the surface.
Although the description of the pan says you can use metal tools - which I have and didn't see any damage to the non-stick surface. However - I would probably stay with non-metal tools just in case.
Overall - I am very happy with the purchase but can't tell you how long the surface really lasts. The only negative is it didn't come with a 12" glass lid. I had to spend another $19 for that.
