This pan represents a great value, and may be the most useful one that I have. I have a very flat ceramic coated electric stovetop, and the Cuisinart products are a perfect match. Since the burner does not waste energy heating the air surrounding the pan, it can be used quickly, and rarely benefits from more than a medium burner temperature setting.
I used to believe that non-stick surfaces (especially the Analon cookware) represented the best way to cook - easy to use plus easy to clean. Now my eyes have been opened, and I consider stainless steel to be preferred in most cases. It is actually easier to keep clean, and there is no concern for the little scratches, eventual discoloration, and loss of effectiveness that seem to eventually afflict Teflon.
Of course I read the other reviews, and having used this pan (as well as a Cuisinart saucepan) for awhile I would like to offer a couple of suggestions. First, my pans arrived with perfectly flat surfaces, and I think that if they are never overheated they will probably stay that way. Second, if you fall asleep while making caramel (or maybe anything else) the food is going to stick - so don't do that.
When I noticed that the best restaurants don't seem to need non-stick cookware, I was willing to give stainless a try - but I was not willing to commit a fortune to the experiment. I looked at All-Clad and some of their similarly expensive imitators and was concerned that perhaps you get what you pay for. Actually, that might be true since the higher-priced products are noticeably heavier and more robust. They also have much bigger signs and the sales staff in the cooking stores will rush to your side to extol the virtues of the alchemy employed in their creation. In the future I may save up for one of these investment-grade pans, but for now I am completely satisfied with what I have.
