We finally got to test this out tonight. We had a modern stove-top pressure cooker, but replaced it with this. We bought the cheapest beef roast we could find. And low, and behold, Cuisinart has this down to a science.

We browned the roast in the cooker, placed the wrack under the meat, added water, bread-n-butter pickle juice, sliced jalepenos, and an onion quartered. Cooked on high pressure for 40 minutes. Then, added 2 LARGE baking potatoes, 3 LARGE carrots, 2 quaters of cabbage. Again on high pressure for an additional 15 minutes.

The Result: The meat was PERFECT. Literally melt in your mouth, no knife needed. The softest beef I've ever had. The potato and carrot was perfect as well, the cabbage overcooked. (Guess I need more experiments. LOL)

Tips:

Do as much browning/mixing/saute-ing as posible right in the cooker, it gets hot quick enough, and all the flavors will be in the pot, and the cooker will be warm for a quicker pressure gain.

Being warm after browning/saute prep work, it took 10 minutes to reach high-pressure. Being filled to the max with the added veggies cooled it down considerably, so it took 16 minutes to reach the high pressure again. All food is different, experiment and be patient.

This thing will not leave my counter. I will always use it, as I love slow cooked dishes, now accomplished super fast with this machine! It is pressure perfection!

I purchased this because I had heard a lot of good things about pressure cooking. I considered the Russell Hobbs but heard from others that it was problematic at best. I own some other Cuisinart stuff and have been generally pleased, this turned out to be the exception. Problems were:

It did not work very well, would not get up to pressure, I had to tap on the release valve to get it to seal. It was a hassle, and after 4 uses it would shut itself off. Even though the results were good, it was a real effort. I tried calling Cuisinart's customer service, to put it baldly, their customer service sucks. You have to wait forever on hold, and the reps have no product knowledge. They expect you to return the item at your cost and include return shipping. Try talking to a supervisor - they don't have them!

One other negative point - it's a 6 qt. cooker but you can only fill it to 2/3 of capacity - this is true of all pressure cookers. In this case you have a very large heavy unit that can only make a small meal.

I gave up and returned the unit to Amazon, which was pretty painless. I bought a 10 qt. stove top Fagor pressure cooker from Amazon. It takes up less space, cooks a lot more food, and is in my opinion a lot easier to use. Skip all the electronic stuff and go for simple. KISS always works in the end. (Keep It Simple Stupid!)

I've had several pressure cookers over the past 35 years. Time came for another new one. I was so surprised to find an electric model - and with a great brand name. Reviews were good, so I ordered it. It was delivered in a crushed box, cooker badly dented, so had to send it back. Amazon was terrific. No hassles at all. Sent me a new one immediately. It took a couple of tries before we actually had this cooker working correctly. They don't tell you in the manual that if it keeps beeping when you start it that means the cover isn't on tight enough. However, we soon figured everything out. This cooker is amazing! So very quiet. Heats quickly. Having both high and low pressure settings is something that not all electric models have according to one cookbook I looked at. The browning feature is at just the right temperature - browns quickly without burning. We've cooked corn on the cob, stews, butternut squash from our garden (to be packaged and frozen), and other veggies. Our food is perfectly cooked in no time at all. The beeper lets you know when your food it done. Very easy to clean. This is my new "favorite toy". I have started collecting pressure cooker recipes to try. I'm a working wife, so appreciate the speed of cooking. I can actually cook several meals on the weekend to refrigerate or freeze. Hope my cooker lasts forever.

Customer Review: Practically Perfect in Every Way

There is little I can say of this product that others haven't said: having an elderly mother in the house, who can eat little, this product has made my life very much easier. She can actually EAT most of what I have made thus far. These are benefits of pressure cooking in general, regardless of who made the unit. What I like about THIS cooker is the ease of use and speed with which it changes heat settings (from Browning to Saute, for example) and its easy-to-operate controls. Being electric, and not stovetop, makes me feel safer, and it uses much less electricity that my stove. It is laden with safety features, and the automatic timer adds convenience as well.

One flaw only annoys me: around the cavity into which the pot sits, there is a ring with protrusions over a recess that surrounds the cavity, and which the lid locks onto during pressure cooking. This makes for very difficult cleanup in this one area. A sponge or paper towel wedged into the crevice and run around the outside does a fair job, but is a real pain--and because this recess inevitably traps spills, it requires constant cleaning. But for this one design flaw, I find the product deserves high praise for its efficiency, safety and ease of use. I would defintely recommend both it and pressure cooking in general to anybody who likes good food.

I bought the pressure cooker because I will be starting an Internship that has me traveling 3+ hours (to and from combined) a day. I needed something that would allow me to make meals in less time and enough that I can freeze portions for future dinners and lunches. I have done pretty good with using my hotplate, toaster oven, and microwave for the last few years. And I know how to make simple yet healthy meals. I wanted to branch out a little more and decided to research pressure cookers. I found this one to be at a moderate price and enough positive reviews. I also bought the "Cooking Under Pressure" cookbook by Lorna Sass because it seems everyone defers to her. The electric pressure cooker arrived within a week of ordering (with the free shipping selected). The instruction book was very helpful with cleaning, storage, and cooking tips. I just made my first meal (Chicken Gumbo from the Sass cookbook) and I cannot say enough about the deliciousness that came out of that pot. I love chicken and can pretty much have it at every meal. But the way that the electric pressure cooker infused flavors and made it taste so tender, goes beyond words and must be experienced firsthand. If I only made this meal, the investment in the electric pressure cooker would be well worth it. I'm looking forward to making a cheesecake next week.
