Kitchen and Housewares Reviews of Cuisinart 726-38H Chef's Classic Stainless 14-Inch Stir-Fry Pan with Helper Handle and Glass CoverCustomer Review: Not for proper Asian type of cooking Summary: 2 Stars
In order to cook a proper Asian food or most type of Chinese/cantonese style cooking, usually you need to cook it in a super high heat achieved usually by using a pressured gas cooker. All the ingredients are usually prepared and ready to go before you start and once you start frying you have to move very quick and cook them in pretty much in an instant. Since gas stove at home do not have a pressured gas stove so I thought I could at least use a stainless steel wok instead of a non-stick wok in order to achieve the similar effect of cooking from a Chinese restaurant since stainless steel will usually be hotter than the non-stick ones... or so I thought... Wrong..wrong..wrong.. at least not this wok. The side of the wok is pretty thin, so it conduct heat fairly quickly but also loses it very quickly.. this means that when you start frying and stiring those ingredients around, the side of the wok became a lot cooler than the bottom and pretty much the proper cooking only comes from the bottom. It will not also not create what a cantonese call "Wok Hei" or in english pretty much means the "smell of the work" (it's a slightly burned smell you can usually taste in a proper chinese restaurant). Since it's not a non stick, if you cook something stickier, it will stick on the base of the wok and create a layer and further reduces the heat from the wok. The flat base of the wok is also a little too big in my opinion and feel a bit awkward when stiring... all in all, I didn't like it and ended up buying another wok after using it only 5 or 6 times.
