You will never eat boxed noodles again! Homemade pasta is easy and fabulous. Do some research on the internet regarding mixing and standing of the dough. When you place the dough through the rollers, flour it and fold it in half each time on the largest setting (5 or 6 times) until you get a nice, even rectangular shape. Then proceed to the thinnest setting and you will have beautiful, wide noodles. Lay large noodles on a flour-sack cloth to air dry before cutting; about 10-15 minutes. Then cut into linguine. I hang my cut noodles over dowels placed between 2 open drawers to dry for a few hours. Once dried, I place them on a flour-sack cloth until I'm ready to use them You can store dried noodles in a cloth for several weeks -- if they last that long! It's one of my favorite Christmas gifts ever.

I was quite surprised to read the negative reviews here about this piece of equipment. I have had this pasta roller for years, and think it is great for the money. I wipe it clean with a dry cloth, and have never had problems cleaning it. Perhaps if you are not used to making fresh pasta at home (and do not understand the amount of flour needed to prevent sticking) you might initially have problems. However, if you mix your eggs and flour by hand, knead the dough until it is smooth, wrap it in plastic wrap to rest for 30 minutes to an hour, and then use sufficient flour to prevent sticking while using the roller, I think everyone will find it easy to use. I make pasta on a weekly basis to create recipes for my Italian Food Forever website, and often use this handy little machine.

This is in response to another reviewer who blames the people and not the Villa Pasta maker for the substandard product it makes and the horrible quality of the machine. All I can say to this person is that they'd probably be happy with with a brand new car without tires.
Let's review this pathetic pasta maker:
1) It rusts
2) The shining chrome comes off and into your pasta.
3) If you like motor oil in your pasta, you'll love this machine.
4) It is cheaply made.
5) It doesn't work even AFTER you read the instructions.
6) It is a waste of money and not worth the value
7) There are so many better machines out there.
8) It makes a big mess, and that is all it makes.
I'll never buy another Villa product again.
Customer Review: First Try....Perfect Noodles Summary: 5 Stars
I saw this pasta maker recommended in Bon Appetit. I was over eager on the first sheet (not letting it dry enough) and it really gummed up the cutter. My recommendation would be to follow the directions in the manual exactly. Hey, I am a guy...we never read instructions! After rolling out a sheet, sprinkle a bit of flour on the counter and place the sheet on it....sprinkle a bit more flour on top of that and continue to alternate flour and sheets. After allowing the 20 minutes of drying time, you will find the flour makes the sheets easier to handle and aids in seperating the noodles once they are cut. It is definitely an art, and not a science, but I was amazed how good the noodles turned out. I can't wait for my ravioli cutter to arrive.
Customer Review: Beats rolling out by hand! Summary: 4 Stars
This machine is well-built, very sturdy and easy to use. The manual is also easy to follow and has enough basic recipes to get you started.
However, you do need a generous lip on either your counter, table or other work surface to attach the grip securely; and it's not designed for left-handed users. I found that I have to strategically fix the machine to the breakfast bar side of my kitchen counter in order to get enough overhang for the grip plus enough surface for the rolled pasta to 'flow' to. It's a bit awkward, in my case; but, it's worth the effort.
I personally find making fresh pasta fun and rewarding, and it makes great, inexpensive gifts.
