If you have good coffee beans and discerning taste buds, this is a must. The kind of person who cares what estate their coffee comes from will revel in this instrument. I am a poh' young public defender and spent my last monies on the filter-plus-chemex-plus-teapot. I am smiling--YUM! Why am I glad? I used to make french press coffee but became tired of the heavier mouth feel. This brew method produces a much cleaner cup. It also brings out the subtle and varied taste notes of my coffee, such that I go to sleep wishing it were morning so I could drink my coffee. This brew method is also arguably healthier than the french press method. Is it worth the expense? Well, I am cheap, so I went for a while trying my own DIY pour-over method with a quality Hario paper filter (rinsed) and mesh tea strainer. It was fine, it really was. And I am picky. But this is better; it brings out the flavor more and is easier to brew. Coava (yes, I live in Portland, I am a coffee snob) recommends using 25 grams of grounds per 12 oz. water, poured over a minute. See, this is where the Hario teapot (or similar) comes in-- you have to pour a fine stream of water to make 12 oz. last one minute for the pour. You can do it with another kind of teapot though. If you pour in more of a circular motion, stirring up the grounds a little, the coffee will take slightly longer to brew and, some say, have a more complex bouquet. And (like the teapot) the chemex carafe also makes the process easier but is not necessary.
The coffee grind for this method should be coarser than espresso but finer than drip. Another note: I have been going through less coffee since making it this way, than I did with my french press. In a couple months this may pay for itself that way. Also, it is hipster cool. When I purchased this thing, my coffee-obsessed boyfriend came straight to my house while I was at work and took about a dozen pictures of it, excitedly sending me picture texts as though it were a new sport car. The shape and size of the holes, as well as the material of the cone, make this better than other drip brewing methods. What else to say? Sometimes I cradle it in my arms and smile.
