I'm a caterer so (a) I cook a lot, and (b) I have to watch my expenditures. Well, I needed a decent dutch oven and decided to give this a shot because I respect Circulon and it was in my budget. I admit that at first I was disappointed because it had so little weight. (I am somewhat of a snob and sometimes think that heft equals quality, i.e., I'm still waiting to win the lottery so I can buy my 20 piece set of All Clad!) I gave it a shot anyway and have been more than delighted. Cleaning is a breeze; it cooks evenly; and it even browns well. What more could I ask? Well it turns out there was one more thing I could want -- it needed to be idiot-proof because last week I made a bone-headed mistake. I was going to make a small pork roast braised in a salsa verde. Nothing major, right? Except that I ended up unexpectedly leaving the house for the day and forgot that I had the roast on the stove. As I was braising, and it was a small roast, I obviously had very little liquid in the pan. So when I came home I was horrified to find I had left the stove on, albeit it on low. I had a thick glob of crusted salsa verde glued to the bottom of the pan. Now many years ago I had made an equally stupid mistake with a stainless steel dutch oven -- adding WAY too much barley to a soup I was making. I never got the burnt barley off the bottom then, and I thought I was doomed now. But here's why I rave (and you already know the outcome) -- I took a flyer and put the dutch oven into soak for a day. And yes, it's as good as new now. I simply couldn't believe the ultimate ease of cleaning it out.
I also haven't hade any of the issues others have mentioned. My pot still looks good, hasn't turned white around the outside, and despite the light weight, has performed more than admirably. True I don't have a glass top stove, so I can't speak to that. But for anyone wanting a heckuva piece of good cookware for a steal, this can't be beat!
