This product is so simple, it is hard to get too excited about it, but here goes...
Our previous cake pans were purchased in the department stores. They main selling point was their "no-stick" coating. These worked fine - at first but the no stick quickly wears off and the pans are thin & dark and the next thing you know is that all you are worried about is avoiding burns.
We chucked those and got these. OK "no-stick", forget about that. Use PAM (for baking) instead. These pans are heavy gauge aluminum - HEAVY. They retain their shape and they spread the heat evenly. NO hot spots! They are heavy gauge aluminum - HEAVY. They don't burn which means they clean up easily (remember the PAM thing). They are heavy gauge aluminum - HEAVY... period. There is no funky coating to flake off down the road. Take care of these and you will have them for a long, long time.
Bottom line - we like them and we'll be buying more (in different sizes) soon.

Making a cake is a bit of an adventure, there's a certain amount of risk involved, suspense even. This pan from Chicago Metallic provides everything you could want in such a pan: deep, perfectly straight sides, a thick rolled edge, and heavy-duty construction. With long-term use, the pan will darken, creating a need for slightly shorter baking times but enhancing the delicate crust of tender cakes. Both chocolate and white cakes bake up beautifully in this pan, rising evenly, developing a thin crust and good color, and releasing without breakage.
