I really, really would love to give these baking sheets five stars; after all, I have used Chicago Metallic baking products for years and absolutely love them. However, I recently ordered this set of two jelly roll pans and was a bit surprised upon seeing them. They did not appear to be of quite the same quality as the old jelly roll pan I have. The rolled edges were not as completely rolled over and tucked under as the edges on the old one. The corners were different too. Finally, the pans did not seem nearly so "heavy-duty" to me. I remember when I got the first pan - probably back in 2001 or 2002 - and I was very impressed, as other reviewers have noted, with how substantial the pan was. I wonder if I would have been as impressed if these pans had come instead.
At any rate, a thought came to my mind as I looked the new pans over. Were these made in China? So I took the label off and, sure enough, there in small print at the bottom, were the words, "Made in China." I can't say how disappointed I was! I actually still had the label from the original pan in my file cabinet and it said no such thing. In fact, it lists Chicago Metallic with the address to their Lake Zurich, IL manufacturing facility which, according to their 2005 catalog that is still on their website, is where their pans are (were) manufactured. The new label says Chicago Metallic, Focus Products Group LLC and a Vernon Hills, IL address, plus the aforementioned "Made in China."
I will say in fairness that these pans are still likely better than any pan you will buy at Walmart or any other discount store. Also, as a pro, they still offer a 25 year limited warranty. I think that next time, however, I will buy a commercial pan that is still made right here in the U.S.
Customer Review: Not Actually Dishwasher Safe and Lightweight Pans That Tend to Warp Summary: 2 Stars
I had several previous Chicago Mettalic half sheet pans (purchased for about the same price point, if not less) I'd been using for almost a decade. They were finally banged up enough I thought I should replace them and assumed I was getting the same item by ordering these. Not so much. (That's what happens when you assume!)
These are about half the weight/durability of my previous pans and have a tendency to warp. They're not totally unusable but the so-so quality sure makes me wish I didn't buy two sets at once! These are NOT broiler safe and I wouldn't really feel comfortable using them for anything above, say, 350 degrees. These pans are of the same quality of anything you can get off the rack at Wal-Mart and I'm not sure where the term "commerical" fits in, as they're definitely not of a quality capable of handling much of anything, let alone commercial cooking.
I'm not sure if Chicago Metallic has just gone the way of many companies and is now selling an inferior product, or if I got a different model before (the pans I already have aren't marked with any kind of model number), but while these may look alike, they're very different.
Oh and, by the way, if you put these in the dishwasher (even though they're listed here as "dishwasher safe") they will instantly and permanently discolor ... another problem my previous pans did NOT have.
Customer Review: Great performance Summary: 5 Stars
My cookie sheets arrived with a small ding on one side of one sheet, but I decided this would not affect the performance of the pan. I have so far used them to make snicker doodles and am duly impressed. I use baking parchment so there was no trouble with the embossed logo design in the center of the sheets. My cookies baked to a nice even color in the time recommended by the recipe. The cookie bottoms were just the right shade of very light brown, and the cookies did not spread and flatten, but instead retained their basic shape and loft, making a nice soft cookie inside. I am a former user of Insulaire because I do not like hard brown cookie bottoms, but I like my results with these pans even better because sometimes my Insulaire cookies didn't get done in the middle, even when I adjusted temperature and time according to Insulaire recommendations. I'm looking forward to Christmas cookie baking this year with these new CM pans!
Customer Review: Sturdy pan, does not warp Summary: 5 Stars
I've had this pan for a few weeks and it is the best pan I've ever bought. The pan is well made and feels sturdy in your hand. It's heavy, which makes it feel like it can withstand any oven temperature. We've used it to bake cookies, pizza, and other baking uses. Washing is simple, with warm soapy water.
You might have some problems with getting the sticker off when you get it the first time. Whatever glue they use to keep the label on is a little strong. We used some vegetable oil and it seems to have done the trick. Not sure if this is what you're supposed to do, but it worked for us.

My aunt is a personal chef and had given me the 1/4 sheet size Chicago Metallic Commercial pan (which, for the record is the most handy size ever for my two-person household). Now, I'm finding my old high-tech "air cushioned", reinforced, all-the-bells-and-whistles 11x18 sheets are burning food in my oven and warping to boot! In all fairness to those pans though, my oven is gas, cooks unevenly (the left front corner ALWAYS burns!), and has a more uneven temperature cycle than spring! NOW I have the solution and NO, its not a new oven! These pans are a miracle! They hold the heat constant and not even a single profiterole burnt this weekend! I also really like how deep the pans are...my old pans could fit 3 normal cookies across, but these have room for a good 4.
