As per others' suggestions, I picked up 2 of these pans and am so glad I did. These pans have great construction - good finish, straight sides for easy handling, and a nice solid feel without being heavy. I tried the recipe from the packaging and while I had to bake them a couple minutes longer (10-12 minutes instead of their suggested 8), the edges of the cookies became a beautiful golden, the insides were a perfect tenderness, and the undersides of the cookies were just gorgeous. I did add a light coating of non-stick spray, but the madeleines slid right out of the pan with only a little push, I'm not certain it was neccessary. Cleaning the pans was an absolute breeze. Great product and I can't wait to make more cookies with them! :)
