I have an old one and really like it. The steel on these knives is not that good (soft) so it doesn't hold an edge very long but it is very stain resistant. Being soft it sharpens easily though. I have sharpened it with whet stones a few times and use a ceramic steel before each use. Don't use one of those course grooved steels like a file on a knife. They are too crude. Mine can shave arm hairs but is noticeably less sharp after peeling a few potatoes, not dull, but and I re-steel before each use. It is worn back about 1mm or more from the original edge from sharpening so it turns even easier now.

I can't leave a knife alone so in addition to sharpening I have modified the handle rounding and tapered the edges and refining the corners a little and polished the blade. I oil the handle with mineral oil every now and then and it looks better then new. Sanded a little with fine sandpaper and oiled, the walnut on mine is quite beautiful and it doesn't say Chicago Cutlery any more either!

If you respect this knife and keep the handle oiled with mineral oil, or even better teak or boiled linseed oil, and don't put it in the dishwasher or leave it laying in the sink wet it should easily last 100 years and more.

I have better knives but I like the offset and thin blade for paring and the walnut handle. Also this was my first paring knife. It turns easily and is very nimble while cutting something like coring the end of a bell pepper or apple sections. For bigger things I use a chefs knife. The blade being thin like a boning knife and offset back a little from the front of the handle makes for good ergonomics for paring and peeling. Swiss Army Forschners are cheaper and have better steel but I still reach for this one many times. I don't like the handles on the small Forschners. they are too small for me.

For most paring I use a $40 MAC but you can't beat this one for bang for the buck and I still reach for it over the MAC in some situations.
