Kitchen and Housewares Reviews of Chef's Design 21-by-12-3/4-Inch Maxi GriddleCustomer Review: great but careful of the handles Summary: 5 Stars
We got this griddle after we grew tired of replacing the electric griddle every few years. We were hoping for a good quality item that would last a long time, and this seems to be it. We use it over two burners on our gas range. Have used it for 18 months and like it.
They say not to heat it above medium in order to preserve the non-stick coating, but to get good pancakes I need at least medium-high and it does not seem to have caused a problem. (I just make sure never to get it hot enough to smoke). We use it mainly for pancakes; occasionally I have used it to thaw foods too (when I remember).
The only thing I don't like is the handle design - the handles get really hot, and it took a couple of burned fingers before I learned not to touch without a potholder. (I know, that sounds a little stupid, but when every other pan in the kitchen has handles you can grab without potholders... well, it takes some time to train yourself for the exception.)
If you want a nice, big griddle made in USA that will last a long time - this is a good choice.
Description of Chef's Design 21-by-12-3/4-Inch Maxi GriddleThis is our largest griddle at 12.75 inch x 21 inch. Works well on gas or electric stoves Measuring 21 inches long and 12-3/4 inches wide, this range-top griddle spans two burners and can churn out large quantities of pancakes, bacon, grilled cheese sandwiches, or burgers to a crowd with an unquenchable appetite. The griddle is constructed of heavy, hand-cast aluminum, which provides excellent heat conduction so foods cook evenly at lower temperatures. The top of the griddle is coated with an Excalibur nonstick surface, reputed to be the toughest nonstick material available because it is reinforced with stainless steel. The coating promotes healthier cooking with fewer fats and easily rinses clean in hot soapy water, requiring no seasoning to maintain its performance. The griddle also has a grooved edge that drains fats away from meats and hollowed-out handles on either end that make it easier to lift. Perhaps the most unique feature of this griddle, however, is its defrosting ability. Without using any heat, the aluminum construction actually transfers natural heat from the air to frozen foods placed on the griddle's surface. Although a bit slower than using the microwave, thawing on this griddle ensures that the edges of foods don't get cooked and dried out as they do during microwave thawing. Thawing time ranges from about 15 minutes for a single hamburger patty to about 45 minutes for a 1-inch-thick steak and requires that the food is turned once for even defrosting and for retaining the food's flavor and juiciness. To keep the nonstick surface intact, the manufacturer recommends against using abrasive sponges, metal utensils, and the dishwasher. Wisconsin Aluminum Foundry offers a 25-year limited warranty on this griddle. --Cristina Vaamonde
