Kitchen and Housewares Reviews of Chef's Choice 470 SteelProCustomer Review: VERY NICE STEELING PRODUCT Summary: 4 Stars
I bought this item on-line and received it today and, of course, had to rip open the package and try it right away. First, I used it on my "1 Star" Henckels 4" paring knife. After the recommended number of strokes, I looked at and felt the edge and was very impressed; it was just what I hoped for. I have had this knife for about a year, and it has never been sharpened, so I was very pleased that a "steeling" product worked so well on it. The knife had a really nice "bite" and cut cleanly into a piece of paper. However, my "2 star" Henckels French Chef's knife was just too far "gone" for the steel to work and I will have to have it professionally sharpened, as I don't own a whetstone.
I am a graduate of one of the best culinary schools in the country, and have great "knife skills" in general, but have never really been able to use a steel well. I think perhaps it is because of my height, 5'3" and the length of my arms making it hard to hold the knife and steel far enough away from my body to make it feel safe, and effective, at the same time. Hope that makes sense!
Due to the number of times that I have had to have my Henckels French knife sharpened, I have become a recent convert to Cutco knives, and after much research, bought this instead of a knife sharpener because Cutco knives keep their edges for years and really just need to be steeled at home. (And no, I don't work for Cutco!) I am really looking forward to using this with my Cutco knives.
Just as a previous reviewer, I only gave this a 4 star rating, because of its "cheesy" plastic housing; I realized after I bought it that there is a heavier steel model available for approximately $20 more. I probably should have bought that one, but this one is just fine for the price I paid. And, to iterate previous reviewers, this is NOT a knife sharpener, and will not produce the edge you want if your knife needs to be sharpened; however, it is a very easy to use and effective "steeling" product. Remember, a sharp knife is a safe knife!
Description of Chef's Choice 470 SteelProChef's Choice SteePro 470 Many owners of fine knives are intimidated by home sharpening with a steel. The SteelPro takes the guesswork and intimidation out of sharpening, yet still uses the preferred steel method instead of abrasives to create a super-sharp edge. By drawing a blade alternately through one slot then another in the SteelPro approximately ten times, the edge develops micro-serrations that cut food exceptionally well. The guides maintain an angle of approximately 23 degrees. Professional sharpening will still be required periodically in the life of a high-quality knife. Clever design features make this device a pleasure to use. Using a coin, the tops of the two miniature steels can be loosened and the steels rotated when a fresh surface is required. However, the steel is so hard that several thousand strokes are needed to dull it even slightly. The sure-grip handle is comfortable for either left- or right-handed users, and a ring allows the sharpener to be hung. The glossy, chrome-look base is actually a durable plastic but looks smart in the modern kitchen and stays put during use thanks to small rubber feet. Not for use with scissors, serrated knives, or ceramic knives, the SteelPro is covered by a one-year warranty and measures 7 by 2 by 2-3/4 inches. --Ann Bieri
