This is the easiest way I have found to sharpen basic kitchen knives. Provided you follow the directions EXACTLY, you can get a VERY sharp edge. Truly razor sharp? No, but MORE than adequate for the kitchen and usually far better than the factory edge on most knives out of the box. I can put a much sharper edge on my chisels and carving knives using my wet grinder, water stones, and leather strop but they are not subjected to the type of abuse kitchen knives get. The fact that its FAST and easy (again, once you follow the directions EXACTLY) will encourage you to use it often to get that "just sharpened" feel. I would highly recommend this product to anyone who spend any time in the kitchen preparing food.

I am an Executive Chef and have worked in a kitchen for over 25 years. I purchased this sharpener about a month ago and so far I am very satisfied. If you read the manual, it is very easy to use. I was at first worried about taking too much metal off of my kinves. As long as you don't over use the first stage that should not be a problem.
It put a good edge on my knives quickly and easily. I have a 10 inch wusthof that is my main kitchen knife. I put an edge on it with stage 1 over a month ago and it has remanined very sharp since. All you have to do is run it through stage 2 ( which is just like a steel) every once and a while and it maintains it's sharpness.
So far I am very satisfied.

How does any cook live without some kind of help for knife sharpening? I had an older version of this machine, which worked ok but it took a long time to sharpen anything. This one works faster. The written instructions are stupifyingly confusing, but the directions right on the machine are fine. One of the stations simply hones the blades--I use it all the time instead of my sharpening steel. I have a fancy thin Japanese knife that I sharpen with a stone because I think the Chef's Choice will be too rough on it.

I often bring my Chef's Choice along to dinners with friends. After sharpening their knifes they are amazed and grateful. What people cut with is unbelievable.

I sharpened my set of Henkels that are 6 years old. They couldn't cut your finger even if you tried.

Fast forward to the M130. Within 10 minutes, all my knives were sharpened. I opened up our brand new Global knife from Williams-Sonoma that we got as a wedding gift to compare.

I cut several oranges with the global knife and then with the Henkel's chef's knife. The difference is so minimal that you would hardly be able to tell unless you were doing an A/B comparison.

The $150 is a lot better than buying a new set of knives. Great thing is, I'm planning on helping my parents and in-laws sharpen theirs as well. Gots to get my $$'s worth!

I wish I had all the money back that I wasted on so-called knife sharpeners before and simply bought the ancestor of this one. Most knife sharpeners simply true or align an edge, this actually sharpens. Although the instructions are a bit complicated it is important to read them thoroughly as one does not simply take the knife through the sharpening stations numbered one through three. The resultant edges are remarkable and actually sharper than when my chef's knives were new. The sharpened knives were able to cut strips through paper and slice translucent slices of tomato. This product, though seemingly expensive, actually is a value. Highly recommended.
