Kitchen and Housewares Reviews of Chantal Enamel-on-Steel 8-Inch Omelet Pan, Cobalt BlueCustomer Review: Great Omelete Pan, but need to use oil Summary: 4 Stars
I bought his pan to replace a 10+year old Wearever 8" non-stick pan whose coating was starting to flake, although it hadn't been very non stick for a while. After doing a ton of research on "healthy/environmentally" friendly non-stick, I gave up as there doesn't seem to be any research to substantiate all the claims. I also didn't want anything made in China for ethical reasons. This was less than half the price of a decent non-stick pan and made in Germany, so I figured it was worth the try.
The pan is solidly made and has just the right amount of heft. The handle looks a bit thin but feels very solid. The blue color looks very sharp. The slides slope in so the bottom is about 6" on the flat part. perfect for a 2-3 egg omelette.
My first attempt at cooking was a disaster. On medium high heat with just a drop of oil the egg stuck badly and took a look of work to clean. However after a few try's I found a good get a good egg on medium-low heat.
Despite the stick resistant claim, I think the enamel is only marginally better than stainless steel in the stick department. You have to use oil or butter for sure, and practice to find the right heat level. I'm a vegetarian and don't consume any animal fat, so I'm not to worried about using a little grape-seed or olive oil on my eggs. I use a misto sprayer to limit the amount i use.
Clean up is easy when cooking on low heat, but higher heat does make things hard to clean
The pan is also a good size to saute some onions or perhaps cook 1 burger. Overall a great inexpensive pan that well built and made in a country that respects their workers and the environment. A great alternative to non-stick if you are concerned at PTFE/PFOA.
