Customer Review: Better than non-stick for the same uses (if you have a brain)!

I don't like non-stick. It's not that I have anything against teflon when used in surgical implants as it's inert at body temperatures. The idea that heating it up too high can kill birds, however, horrifies me as an asthmatic allergy sufferer. For a long time, I just put up with salt pitting my tri-ply stainless pans, thankless hours scrubbing scalded milk-solid off steel, and rice discoloring those pretty, ex-mirror-finish interiors. Then, I got lucky, and picked up a one quart enamel-on-steel Chantal saucepan at a discount store. I've since ordered the 3 quart in blue, and I've got to tell you... As long as you actually pay attention, and don't use heat higher than medium for anything but bringing water to a boil, these pans work far better at the same tasks (saucing, especially,) than non-stick, without causing pause re: my lungs. The pans heat quickly, evenly, and due to their relative thinness as compared to tri-ply-ware, provide exceptionally responsive temperature control, even on electric coil stoves. This makes the vessels great for perfect control of sauce consistency even in the most basic of kitchens. Cleanup is a snap, and the pans are very pretty to boot. Inert glass-like interiors mean you can store in the cooking pot, usually a no-no in Kitchen Science. The idea of Chantal not being expensive is a crock, but I only buy cookware once, unless the boyfriend does something stupid, and then he replaces it, anyway... I'm very happy with these pans, and will buy a two quart as soon as feasible. If you buy, and you're not an impatient, un-knowledgeable, high-temperature cook, you'll be very happy with Chantal's products. The only negatives I can mention are the glass lids, un-sturdy handles (when hefting 6 lbs of liquid, downright flimsy in fact), and extensive use of welding for the sake of interior seamlessness. However, there have been no problems yet, and it doesn't feel like there will be, as long as one is careful. The best part is, as a fan and owner of several pieces of Le Creuset, Chantal fills in the inadequate yet still pricey slots in the French lineup, with better enamel to boot. This stuff is pretty darned close to win-win... Now if only they offered stainless steel lids and heavier handles!
