I currently live in an apartment in New York, so the concept of rolling out the ol' Weber and grilling some choice baby backs is pretty far fetched. I had hoped this smoker would give me bit of that summer barbeque feeling in the city. The Cameron stovetop smoker does live up to its promise of adding a smoky flavor to your food, but with a few significant caveats:
- It does leak smoke. Not a billowing black cloud, but enough (for a small apartment) to be concerned about. I tried "the tweak" as recommend in the manual, but that didn't really solve the problem. Open all your windows, or look forward to a visit from your friendly neighborhood firefighters.
- You better like barbeque (or at least the smell of it) a lot, because it will be hanging in the air for DAYS (again for those with small apartments). Based on my experience, at least 2, maybe 3.
- Those wood chips (really more like pencil shavings) that come with the cooker go quick and the refills (from Cameron of course) are pretty pricey.
While this smoker may work for some, for me the juice isn't worth the squeeze. This thing is going to the graveyard of kitchen gadgets. Where did I leave that rib place takeout menu???

Smoked food tastes great, especially if refrigerated overnight and reheated. I don't know why that is, but first time I smoked some chicken I ate some right away and I put the rest in the fridge; the leftovers tasted much better the next day. The wood chips included are good, although they come in "teaser" quantities -- each of the four kinds is enough for three, maybe four smoking sessions, then you need to buy some more.
Now for the disappointment: if you don't have a really good smoke hood over your kitchen range (vented outside, not one of those things with a filter and a fan), then you should not use this product. If you live in an open-plan apartment like I do, then it's a definite no-no. The amount of smoke that comes out is significant. My apartment smelled of smoke for days on end after the first time I used the smoker. Come to think of it, there is no way to do anything about it -- steam will come out of your food as it cooks, hot air will expand, and they will get out of the smoker, pushing some smoke out too.
I learned my lesson and I use my smoker outdoors now, on the balcony, and it works quite well.

After reading some less than stellar reviews I got a bit nervous, but I have to say after having this smoker a few weeks I couldn't be happier. So far I've made salmon, grouper, chicken, pork chops and ribs and each one came out perfect and juicy. In fact its so good for fish I would have bought it for that alone had I known. I used it once outside on my grill for ribs and wasn't happy with the results although it was probably the grill's fault. I've used it in the house all the other times, The second time I cooked the ribs for an hour inside then finished them up in the oven after taking the chips out (got that recipe from [...] from Emeril's show which is where I first saw this smoker) I've had a cold smoker in the past and while this is no substitute, it really is a great little item for cooking everyday foods. One complaint some commented on was the smell in the house when cooking, I have not noticed a problem with that at all, no more than any other cooking method. One corner doesn't seal as well as I like so I just put some foil over that part. All in all its a really good product that I would have no hesitation recommending.

I've used my Cameron Smoker for a coupla of years now and have been delighted with the results.I've smoked a mess of chicken,mostly wings and breasts.Lamb,shrimp and ribs also.It will take yu a few times to get the hang of it and not set off your smoke detector.
anyhow..I endorse this pan,100%.It's very well made and will last me my lifetime and then some.The pan with the lid closed tightly gets very hot and you can cook smaller cuts of stuff without another step.I use my Camerons for "big" stuff like chicken breasts.It gives them a great flavor and then broil them till done.Smaller goodies like shrimp,lamb or beef stew meat,marinated over night and placed on skewers, do not require cooking.They will cook in the Cameron about 10 minutes for shrimp and 20 to 30 for meat kabobs.Also,babybax need no additional cooking after the smoking process.I eat them all the time indoors now because it's quick and easy with this smoker.I love it.Salmon is next.Then I'm going to attempt a little 3lb pork shoulder.Smoke it a bit longer and perhaps put in a metal camping cup of water to keep it from drying out.I'll let you know how it worked.

I just hickory smoked a rack of ribs for about an hour and a half. I used Camerons Hickory Wood Chips along with a little bit of Apple Wood. Then basted it with BBQ mop sauce I made from Apple Cider Vinegar, Tomato Paste, Ketchup and brown sugar while finishing the cooking in the oven for an hour to an hour and a half at 225 degrees F. Then finished the ribs under the broiler for a few minutes each side with my favorite BBQ Sauce.
All according to the recipe in the book that comes with the smoker (Except the basting sauce I made). The ribs came out better than any resteraunt I have been in.
It is easy and really good. I recommend buying extra bags of wood chips once you find what you like. Buy them in the 2 lb. bags and it is very reasonable. You use dfferent wood smoke for different meats, fish and almost anything.
The next thing I try is smoking my own salmon and then I will try to smoke some cheeses (Mozz. and provolone)
I cannot recommend the Camerons Smoker enough. No smoke escapes the smoker just a light fragrance of the wood smoke.
