Customer Review: At last a Great Grill Pan!

I just purchased this "Calphalon Professional Non-Stick 12 In Round Grill Pan". After the first use I am in love with it. I had replaced a Circulon Grill pan because it never did quite what it was meant to do- sear and grill food and was hard to clean! This Calphalon Grill pan, is lightweight which is a plus for me. I read and followed the manufacturer's directions for heat settings and not using any Non-stick Spray in the pan. It worked out perfectly the very first time. I have a Glass-top electric range and it heated up nicely on the recommended MED-High setting. I sprinkled the pan very lightly with a little oil and let the pan reach temperature before placing the 4 (paper-towel dried)pork chops in it. Drying meat before browning is a tip from JULIA CHILD- not the manufacturer, but never-the-less meats will not sear and brown properly if they are moist when placing into the pan. They will steam but not brown- which is the point of searing and grilling after all. At any rate- the 4 chops browned and took on beautiful grill marks! They cooked evenly were tender and flavorful. They did not stick in the pan and the clean-up was easy. Again, following directions I let it cool down and then soaked it with a little hot sudsy water. It wiped completely clean almost instantly. Can't wait to use it again- next up grilled Veggys! Hooray for a Grill I can use indoors in any weather or mood! Over the years I have had 3 or 4 grill pans of different types and sizes but this one is the winner by far!

Heavy-gauge hard anodized aluminum pan has a raised, grooved cooking surface so the fats and oils simply drain away from your burgers, poultry and fish as they cook. And for easy clean up, the interior's cooking surface is treated with a nonstick material. The multi-riveted, Cool Touch arch-vent handle pulls the heat through and away from the pan keeping it cool so long as it's on the stovetop. Note: Not intended for induction, ceramic, and glass cooktop surfaces. Because of the pan's raised, grooved cooking surface, the bottom portion is not entirely flat and will not lie flush against your stovetop surface, preventing the heat from penetrating all of your food.All Pans
